It’s been getting less frequent for our entire family — including our two adult children — to be home for dinner. It does happen about once or twice a week, but most of the time David and I and the younger two kids will eat together, with the older two will eat separately at a later time. I do miss all of us eating together on a daily basis, but with work schedules being so varied, it’s hard for it to always work out.
This week, we had one of those nights when we would all be together and we planned on catching up on some movies from Redbox. But, my day had been incredibly busy, so I needed a super easy meal to make.
I had recently been invited to make a recipe using Hellmann’s Real Mayonnaise and after checking out their website, I saw lots of options that were simple and within our budget . They are having a Hellmann’s Chicken Challenge were you can vote for a favorite recipe, plus be entered in their sweepstakes.
Our movie night night seemed like a good match for many of the recipes they had, so I printed out the recipe for Parmesan Crusted Chicken and went shopping at Walmart.
Now, see how I’ve mentioned Hellmann’s, but I have Best Foods in the photo below? It’s because they are the same thing — their mayonnaise is called Best Foods west of the Rockies, which is where I am. They have lots of interesting Hellmann’s history on their website, so check it out when you have the time. They even tell you why there is a blue ribbon on their labels. I always enjoy learning about how companies came to be what they are today.
Once I was home, I got started on our dinner. This Parmesan Crusted Chicken recipe only has 4 ingredients: chicken breasts, Italian seasoned breadcrumbs, Parmesan cheese, and Best Foods Mayonnaise. Only four ingredients makes me very happy on busy days.
For four chicken breasts, you’ll need 1/2 cup of Hellmann’s or Best Foods Real Mayonnaise and 1/2 cup grated Parmesan cheese.
I made 8 chicken breasts, so I doubled the original amounts and mixed all this up.
Place your chicken breasts on a baking sheet or in a pan, and spread the mixture on the tops and sides of the chicken. Then, top each chicken breast with 1 teaspoon of Italian breadcrumbs.
Bake in a 425 degree F oven for about 20 minutes or until done.
In 30 minutes, you have a delicious chicken dinner! Everyone in my family loved it — even those that aren’t big fans of mayonnaise. As a matter of fact, they liked it so much that it even had me thinking HEY! I didn’t spend nearly the same amount of time on this as I did some of our other meals! But, it goes to show you that I don’t have to spend all night in the kitchen to make them happy.
We had a great dinner and I loved that I wasn’t in the kitchen for hours. We watched our movies and laughed and enjoyed our night together.

Ingredients
- 1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise
- 1/4 cup grated Parmesan cheese
- 4 boneless (skinless chicken breast halves)
- 4 teaspoons Italian seasoned bread crumbs
Instructions
- Preheat oven to 425°.
- Combine Hellmann’s® or Best Foods® Real Mayonnaise with Parmesan cheese in a bowl. Arrange chicken on a baking sheet sprayed with cooking spray. Evenly top with mayonnaise mixture, then sprinkle each chicken with 1 teaspoon of the bread crumbs.
- Bake for 20 minutes or until chicken is thoroughly cooked.
