Growing up, we didn't have homemade macaroni and cheese very often. Most of the time when we did have it, it was a boxed variety. We ate the boxed macaroni and cheese A LOT. It was a side dish for hot dogs, hamburgers, fish sticks...you name it. I, however, have been making homemade mac and cheese for years. Generally when I make it, I don't include meat, like this version does, but sometimes I mix things up a bit and do something different. This Chicken-Bacon Macaroni and Cheese is one … [Read more...]

I believe I've talked before about my love of sandwiches. Cold or hot...I love them all. And I don't think I could ever get tired of sandwiches either. Sandwiches and me get along beautifully. Luckily, the same is true of sandwiches and everyone in my family. My kids seriously get excited for hand-held dinners. When it comes to hot sandwiches, there's a few that we make frequently in our house: Oven Baked Meatball Sandwiches, Grilled Cheese, and Philly Cheesesteaks. The recipe I'm sharing … [Read more...]

Broccoli and cheese are one of my ultimate comfort foods. My mom always made a great cheese sauce and I always loved having it over steamed broccoli . This recipe reminds me of having steamed broccoli with cheese sauce because, well, that's pretty much what it is, except in a casserole. As much as I love the cheese sauce and the broccoli, there is something else I love even more: the cracker topping. The crackers I use have a sweet memory for me. When my sister, Danielle, and I were first … [Read more...]

When I was a kid, my mom used to watch Julia Child on TV. I believe it was Julia Child & Company, although I can't be sure. I can't say that I paid a whole lot of attention to her show, but I remember thinking that her voice and the things she would say were pretty funny. I remember thinking how she was probably the best cook ever, since she had a TV show and cookbooks and so many people talked about her. I also thought the food she cooked was "fancy", because it wasn't the things we … [Read more...]

Pin It We might be the only family who does this, but.... We celebrate new TV shows starting. I make no secrets that we have lots of favorite TV shows. We usually DVR most and then watch as our schedule allow. But there is some shows that we are so crazy about that we watch right away. On Sunday, that's exactly what happened. … [Read more...]

My oldest daughter has to wake up for work VERY early. I am usually still awake when she gets up for work. We also tend to eat dinner much later than your average family, so many nights, she is in the routine of going to bed before dinner is ever done. When she wakes in the morning, she eats the dinner for her breakfast. It's a switched around way of living, but it's working for her (and us) at this point. … [Read more...]

It makes perfect sense: potatoes with bacon and cheese. My sister-in-law created the original recipe, years ago, and now Bacon-Cheddar Potato Salad is a frequent, and favorite, potato salad in our house. When I heard that the June 2011 Daring Cooks' Challenge would be Healthy Potato Salads from Around the World, I knew exactly what I was going to make. My Bacon-Cheddar Potato Salad has long been on my to-do list to post here on my blog, and I've made enough changes throughout the years that I … [Read more...]

Several years back, family friends of our invited us to dinner and they served this potluck-type side dish, which I called Cheesy Potato Casserole, but they called it Funeral Potatoes. I thought it was an odd name, but they were good and over the years, Cheesy Potato Casserole (or Funeral Potatoes) became a family favorite. … [Read more...]

Spaghetti Casserole is a meal from my childhood that I've always enjoyed. It's also one of the few dinners that I was willing to reheat the next day as leftovers (I'm not big on leftovers). When talking to David and the kids today I mentioned that we were having it tonight and that I would post it on the blog. I said that I think it might need a more "fancy" name. Spaghetti Casserole is so....I don't know....boring? We brainstormed for a minute and came up with: Spaghetti Bacon … [Read more...]
