If you like ridiculously easy kid-friendly recipes like I do, I think you're going to like this one. In my teen years, my mom started making what we called "Chex Chicken", which was a chicken breast dipped in sweetened condensed milk and coated with crushed corn Chex cereal. I loved this dinner, as did all of us kids. Sweet and Crunchy Chicken Tenders is pretty much the same idea as our old "Chex Chicken", but I cut the chicken breasts into chicken tenders. I usually use corn Chex cereal … [Read more...]

Comfort food is the ultimate of food memories, don't you think? This week for #SundaySupper, our theme is exactly that...comfort food. I think that's a perfect theme for Home Cooking Memories to participate in. Comfort food usually evokes certain feelings and memories when you cook it and, most importantly, when you eat it. And that's what this blog is all about -- food memories and stories. … [Read more...]

When I meal plan, I usually balance easy meals with time-consuming meals. If I know that I will be cooking for hours on one day, the next day will almost always be something easier. This Crispy Garlic-Parmesan Chicken is an example of an easy meal I made. It was made with a new Progresso Recipe Starters cooking sauce, which was sent to me to try out. The recipe was easy and the chicken turned out good. I loved that the breading was equal parts of Parmesan cheese and panko bread crumbs. … [Read more...]

I've never been tailgating, so when I learned that this week's #SundaySupper theme would be tailgating food, I had no clue what to make. I *think* some of the food I cook would be perfect for tailgating, but I started overthinking it, as usual. I turned to my friends and they helped give me insight into the world of tailgating. They even gave me links to tailgating food on Food Networks site, and more. I quickly realized it wasn't complicated and it was then that my friend, Amanda, suggested … [Read more...]

It's not like a I need an excuse to use cheese in a recipe, but since June is National Dairy Month, I might as well make one of my favorite dinners that involves my favorite dairy product -- CHEESE! The dinner: Easy Baked Chicken Parmesan. Our entire family loves Chicken Parmesan, but I haven't made it in a long time. … [Read more...]

Anyone familiar with Sizzler restaurants? It's was one of our favorite restaurants when we were dating and the early years of our marriage. We haven't lived near one in quite a while, but we had a chance to eat at one during our move to Las Vegas -- we stopped at their location in Flagstaff, AZ. … [Read more...]

Chicken pot pie is one of my top favorite comfort foods. In the early years of our marriage, there was no way I would have made it homemade. Seemed so complicated. We did have it at home, but it was almost always a frozen variety. I ordered it in restaurants too. I remember choosing it during our 3rd wedding anniversary date night to Marie Callendar's restaurant. I've come a long ways from that time and I think my family is quite happy that I have. If I say we are having chicken pot pie for … [Read more...]

It's been getting less frequent for our entire family -- including our two adult children -- to be home for dinner. It does happen about once or twice a week, but most of the time David and I and the younger two kids will eat together, with the older two will eat separately at a later time. I do miss all of us eating together on a daily basis, but with work schedules being so varied, it's hard for it to always work out. This week, we had one of those nights when we would all be together and … [Read more...]

My oldest daughter has to wake up for work VERY early. I am usually still awake when she gets up for work. We also tend to eat dinner much later than your average family, so many nights, she is in the routine of going to bed before dinner is ever done. When she wakes in the morning, she eats the dinner for her breakfast. It's a switched around way of living, but it's working for her (and us) at this point. … [Read more...]
