Description

These Easy Jam Shortbread Bars (also called Mabrousheh) are a Palestinian treat that pairs perfectly with your morning coffee or tea. Not only will I show you how to make this treat, but I will also introduce you to the amazing Palestinian woman who shared this recipe with me.


Ingredients

  • 2 eggs
  • 1 cup butter, softened (Massara used ghee)
  • 1 cup white sugar
  • 2 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 4 cups all-purpose flour
  • 1 1/22 cups fruit jam (Massara used fig jam, I used strawberry jam)

Instructions

  1. Preheat the oven to 350 F. Grease baking pan(s).
  2. In a large mixing bowl, beat together 2 eggs until well beaten. Beat the butter, sugar, and vanilla extract into the eggs until well blended and creamy. 
  3. With a mixing spoon, stir in the flour and baking powder into the wet ingredients until all the flour is incorporated and a large ball of dough has formed. Do not overmix.
  4. Set aside 1/3 of the dough to be used for the topping and place it in the freezer for 30 minutes.
  5. Press out the remaining dough evenly onto your baking pan. 
  6. Spread the jam evenly onto the base.
  7. Remove the reserved dough from the freezer and either grate it over the jam with a grater OR crumble the dough by hand over the jam.
  8. Bake in the oven for 20 minutes or until the top of the bars is slightly golden brown. Let the bars cool for about 10 minutes and then cut them into squares for serving.
