This 5-Ingredient Fried Rice with Egg recipe is an easy lunch or dinner idea that is delicious as a main dish or a side dish. You will only need a few ingredients: cooked rice, frozen peas and carrots, egg, oil, and soy sauce.
3 cups leftover rice (cooked and cold)
1 cup frozen peas & carrots
2 tablespoons oil
Soy sauce to taste
—Don’t have leftover rice? Make rice in advance of making this recipe, allowing enough time for it to cool. Bring the 2 cups of water to a boil. Add in the 1 cup of uncooked rice. Reduce heat to low/medium, cover with a lid and let simmer for 15-20 minutes or until cooked through and water is absorbed. Allow to cool completely before using in the recipe.
–TIP: Make extra rice with other meals, so you can make this recipe later.
–Serves 4 with about 1 cup per person. If using as a side dish, this recipe can serve up to 8 with 1/2 cup serving per person.
