  • 1 tablespoons butter (melted)
  • 1 cup apple butter
  • 3/4 cup packed light brown sugar
  • 4 tablespoons canola oil
  • 1/2 cup diced apples (I used about 1/2 of a medium sized granny smith)
  • 1/2 cup walnuts (chopped)
  • 1/2 cup buttermilk
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups plus 2 tablespoons all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon allspice
  • 1/4 teaspoon salt
  • Optional: granulated sugar

Instructions

  1. Preheat oven to 350 degrees F. Spray an 8″ square pan with nonstick cooking spray.
  2. In a large bowl, place melted butter, apple butter, brown sugar, and oil and whisk until smooth. Add apples, nuts, buttermilk, egg, and vanilla and mix well. Add flour, baking soda, cinnamon, ginger, allspice, and salt; whisk until just combined.
  3. Spread batter in the prepared baking dish. If desired, sprinkle top of batter with a bit of granulated sugar. Bake until a knife inserted in the center comes out clean, which will be about 35-40 minutes.
