Carrot Cake Mix Cookies
- 1 oz box carrot cake mix (15)
- 2/3 cup flour
- 2 eggs
- 1/3 cup vegetable oil
- 1/4 cup sour cream
- Sugar
Cream Cheese Frosting
- 4 ounces cream cream (softened)
- 1/4 cup butter (softened)
- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla
- Garnish: Crushed Walnuts
Instructions
Carrot Cake Mix Cookies:
- Preheat oven to 350 degrees F.
- In a bowl, combine cake mix, flour, eggs, vegetable oil and sour cream. Mix well to combine. Dough may be sticky and thick.
- Drop dough using a teaspoon onto a parchment lined baking sheet. Use the bottom of a glass dipped in sugar to flatten the cookies to about 1/4″ thickness.
- Bake 10 minutes or until golden brown on the bottom. Cool completely on a wire rack.
Cream Cheese Frosting
- In a mixing bowl add cream cheese and butter. Beat well. Add powdered sugar and vanilla and beat until no lumps are visible.
- Frost cookies with a generous dollop of frosting and sprinkle with crushed walnuts.
