Carrot Cake Mix Cookies

  • 1 oz box carrot cake mix (15)
  • 2/3 cup flour
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1/4 cup sour cream
  • Sugar

Cream Cheese Frosting

  • 4 ounces cream cream (softened)
  • 1/4 cup butter (softened)
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla
  • Garnish: Crushed Walnuts

Instructions

Carrot Cake Mix Cookies:

  1. Preheat oven to 350 degrees F.
  2. In a bowl, combine cake mix, flour, eggs, vegetable oil and sour cream. Mix well to combine. Dough may be sticky and thick.
  3. Drop dough using a teaspoon onto a parchment lined baking sheet. Use the bottom of a glass dipped in sugar to flatten the cookies to about 1/4″ thickness.
  4. Bake 10 minutes or until golden brown on the bottom. Cool completely on a wire rack.

Cream Cheese Frosting

  1. In a mixing bowl add cream cheese and butter. Beat well. Add powdered sugar and vanilla and beat until no lumps are visible.
  2. Frost cookies with a generous dollop of frosting and sprinkle with crushed walnuts.
