Mojito Fruit Salad

Ingredients

1 tablespoon granulated sugar

5 sprigs fresh mint, leaves torn in half & stems discarded

3 tablespoons fresh lime juice

1 tablespoon rum (optional)

1 cup seedless watermelon, balled

1 cup seedless grapes

1 cup cantaloupe, balled

1 cup strawberries, hulled and quartered 

1 cup kiwi, peeled and quartered

1 cup fresh blueberries


Instructions

In a small bowl, add the sugar and mint leaves. Muddle the mint leaves into the sugar (pressing/crushing/rubbing the leaves into the sugar to release the mint flavor). Remove the mint leaves. Stir the lime juice and rum (if using) into the sugar to create a mojito dressing. Set aside.

In a large bowl, gently mix together all of the fruits. Drizzle the mojito dressing over the fruit mixture and gently combine the dressing with the fruit. Cover the bowl and refrigerate at least 1 hour.

Before serving, gently combine the fruit with the dressing one more time. 

Notes

–Feel free to substitute other fruits or more or less of one fruit. Other fruits to try in this recipe are mango, raspberries, and honeydew.

–Variation: add a sprinkle of shredded coconut to the fruit.
