- 2 15.25oz cans of Pears (in Juice)
- 1 Pint Heavy Whipping Cream
- 1–2 Tablespoons Sugar
- 6oz Cream Cheese
- 3oz Lime Jello Mix
- 1 Teaspoon Vanilla Extract
- Lime (for garnishing – optional)
Instructions
- Drain one of the cans of Pears into a microwave-safe bowl. It should be about a cup. Microwave the juice for 1 minute or until hot.
- To make the first mixture, use a blender to combine the hot Pear Juice, 1 can of pears (the one with no juice), Cream Cheese, and Jello Mix. Blend until well combined.
- To make the second mixture, use a stand mixer or hand mixer to combine the Heavy Whipping Cream, Sugar, and Vanilla Extract. Mix it for about 3-4 minutes on a high speed until it is thick and fluffy. It should look like whipped cream.
- In a large mixing bowl, fold the two mixtures together until well combined. It should be a green color throughout.
- Cut the second can of pears into bite-sized pieces. Save some of them if you want to garnish the jello salad. The juice from the second can doesn’t need to be saved.
- Add the Pears to the Jello Salad mixture. Stir well.
- Cover and refrigerate until firm (about 1-2 hours). Serve garnished with extra Pear pieces and a slice of Lime if desired.
