This quick and easy Oven Roasted Lemon Asparagus Recipe is one of the best vegetable side dishes you can make – especially in the spring!
1 bunch asparagus (about 1 pound)
1 tablespoon olive oil
Salt and pepper, to taste
1. Preheat oven to 400 degrees F. Wash asparagus and snap off the woody ends. Place on a rimmed baking sheet lined with aluminum foil.
2. Drizzle olive oil over asparagus. Then, squeeze the juice of half a lemon over the asparagus and toss to coat. Sprinkle with salt and pepper.
3. Place in the oven and cook for about 10 minutes or until tender when pierced with a fork.
