2 pounds boneless skinless chicken breast
1 onion, diced
1 tablespoon olive oil
Salt and pepper
2 tablespoons chopped fresh oregano
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh thyme leaves
1 teaspoon minced garlic
Juice of 1 lemon
Optional for serving: pocketless pita bread, tzatziki sauce, feta cheese, sliced red onion, sliced red bell pepper, sliced olives, sliced or chopped tomatoes, lettuce, sliced cucumber.
Add the chicken breast and onions to a slow cooker. Drizzle with olive oil. Season liberally with salt and pepper. Add oregano, basil, thyme, and garlic. Squeeze the lemon over the top.
Cover and cook on low for about 4-6 hours, or on high for about 2-3 hours. Season with additional salt and pepper, to taste. Chop chicken or shred with a fork before serving.
Pile the chicken on top of warmed pita bread. Top with your choice of optional toppings: tzatziki sauce, feta cheese, olives, and fresh veggies.
–This chicken mixture is also great used for a salad on top of a bed of salad mix or on top of rice.
