Description

The 2013 Great Food Blogger Cookie Swap is here and I’m sharing my cookie recipe with all of you: Tropical White Chocolate Chip Cookies. Officially approved by coconut-loving husband!


Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 egg
  • 1/2 teaspoon vanilla
  • 2/3 cup white chocolate chips
  • 1 cup macadamia nuts (chopped)
  • 1/2 cup sweetened coconut flakes
  • 1/2 cup finely diced dried pineapple

Instructions

  1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.
  2. In small bowl, combine flour, baking soda, and salt.
  3. In large bowl, cream together butter and sugars until combined. Beat in vanilla and egg until combined. Gradually beat in flour mixture into butter mixture and mix until all incorporated and smooth.
  4. Stir chocolate chips, nuts, coconut, and pineapple into cookie mixture by hand. Drop rounded teaspoonfuls onto prepared baking sheet. Bake 8-10 minutes or until golden brown on edges. Cool on baking sheet for 5 minutes and then transfer to cooling rack to finish cooling.
