Meatless Sloppy Joes

Meatless Sloppy Joes

Today, I'm one of many food bloggers participating in a special awareness event -- Food Bloggers Against Hunger. This is a topic that is personally very important issue to me. Did you know that someone on government food assistance (SNAP) will typical receive only $3-$4 a day to purchase food for themselves? Could you imagine spending only $1 for each of your meals? I recently watched the new documentary, A Place at the Table, and it left me wondering if I could buy food to make a healthy family … [Read more...]

#LaRomanella Calzones

Meatball Calzones

For the past three weeks (at the date of writing this), I have not eaten one thing that was prepared in a home kitchen. Being out of town due to my father's unexpected passing has meant that I've only eaten fast food, casual dining restaurants, free continental breakfasts at a hotel, or {gasp} food from a convenience store. Edamame Dip + Cars 2 Movie Night

Edamame-Dip-4

Movie Night! This weekend, we rented Cars 2 from the Blockbuster Express machine. I enjoy making themed snacks, dinners, or desserts go along with some of the movies we watch and Cars 2 is the perfect movie for a themed snack. This seemed liked a perfect opportunity to finally make Edamame Dip, which I've wanted to make for the longest time. But, before I got busy making my Edamame … [Read more...]

Ina Garten’s Lentil Vegetable Soup

Ina Garten's Lentil Vegetable Soup

While making up my menu plan, and in an attempt to use up some of what I have in my pantry, I noticed that I had two bags of lentils. I've had them for a while now, so I figured: use 'em or lose 'em. I knew I wanted to do a soup with them, so I start my search for a new soup recipe to try. I wanted something low in fat and meatless -- not that we don't eat meat, but we are eating less meat lately. I ended up deciding to make Ina Garten's Lentil Vegetable Soup.  It made a HUGE batch. Of … [Read more...]

Quinoa with Latin Flavors – First Time Cooking Quinoa

Quinoa with Latin Flavors

In September, David, Mattie, and I went to the "Not Back to School Party", hosted by our local homeschool group. It was a potluck and everyone was encouraged to bring something to share with the group. While there was an assortment wonderful things - pasta salad, fruit, chips, and more - there was one item that particularly interested me. It was a cold dish made primarily with quinoa (pronounced keen-wah). The mom who brought it said she found it on the back of a box of Trader Joe's guinoa? … [Read more...]
