  • Cake:
  • 3 cups flour (I weighed my flour so that I had 13 1/2 oz of flour)
  • 2 cup sugar
  • 3 teaspoons baking powder
  • 3 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 1/2 cup milk (I used skim)
  • 4 tablespoons butter (melted)
  • 2 teaspoon vanilla extract
  • 2 eggs
  • 2 Granny Smith apples; peeled (cored, and diced)
  • Cooking spray

Streusel:

  • 1/2 cup brown sugar (packed)
  • 4 tablespoons flour
  • 1 teaspoon ground cinnamon
  • 4 tablespoons chilled butter (cut into small pieces)

Instructions

  1. Preheat oven to 350° F. Spray a 13×9″ baking dish with cooking spray.
  2. In a large bowl, combine flour, sugar, baking powder, cinnamon, and salt, with a whisk. Make a well in center of mixture. In another bowl, combine milk, melted butter, vanilla, and egg, stirring with a whisk so everything is blended. Add milk/egg mixture to the flour mixture (into the well you’ve created). Stir until everything is mixed together and moist. Fold in the apple. Pour batter into prepared baking dish.
  3. To make the streusel: Combine the brown sugar, 4 tablespoons flour, and 1 teaspoon cinnamon in a small bowl. Cut in butter with a pastry blender (can use a fork or two knives in you don’t have a pastry blender), until mixture is crumbly, like coarse meal. Sprinkle streusel over batter.
  4. Bake for 45 minutes or until a knife inserted in the center comes out clean. Allow to cool for at least 10 minutes before serving.
