- Cake:
- 3 cups flour (I weighed my flour so that I had 13 1/2 oz of flour)
- 2 cup sugar
- 3 teaspoons baking powder
- 3 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 1/2 cup milk (I used skim)
- 4 tablespoons butter (melted)
- 2 teaspoon vanilla extract
- 2 eggs
- 2 Granny Smith apples; peeled (cored, and diced)
- Cooking spray
Streusel:
- 1/2 cup brown sugar (packed)
- 4 tablespoons flour
- 1 teaspoon ground cinnamon
- 4 tablespoons chilled butter (cut into small pieces)
Instructions
- Preheat oven to 350° F. Spray a 13×9″ baking dish with cooking spray.
- In a large bowl, combine flour, sugar, baking powder, cinnamon, and salt, with a whisk. Make a well in center of mixture. In another bowl, combine milk, melted butter, vanilla, and egg, stirring with a whisk so everything is blended. Add milk/egg mixture to the flour mixture (into the well you’ve created). Stir until everything is mixed together and moist. Fold in the apple. Pour batter into prepared baking dish.
- To make the streusel: Combine the brown sugar, 4 tablespoons flour, and 1 teaspoon cinnamon in a small bowl. Cut in butter with a pastry blender (can use a fork or two knives in you don’t have a pastry blender), until mixture is crumbly, like coarse meal. Sprinkle streusel over batter.
- Bake for 45 minutes or until a knife inserted in the center comes out clean. Allow to cool for at least 10 minutes before serving.
