- All-Purpose Flour (2 1/4 Cups)
- Baking Soda (1 Teaspoon)
- Unsalted Butter (1 Cup/ 2 Sticks)
- Granulated Sugar (3/4 Cup)
- Brown Sugar (3/4 Cup)
- Large Eggs (2 – Room Temperature)
- Potato Chips (2 Cups – Crushed)
- Butterscotch Chips (1 Cup)

- Preheat oven to 350 F
- Line baking sheet(s) with silicone mat or parchment paper.
- In a small mixing bowl, whisk together flour and baking soda
- In a large mixing bowl or stand mixer, beat the eggs until well combined
- Gradually add the flour mixture until mixed.
- Stir in crushed potato chips and butterscotch chips
- Divide cookie dough on a cooking sheet with a cookie dough scoop or spoon.
- Bake for 8–10 minutes
- After letting them sit for 2 minutes, transfer to a wire rack so they can cool completely.
- Store in an air-tight container
