Making homemade cookies in our household is almost a weekly activity! We are big fans of Chocolate Chip Walnut cookies and tend to make those over anything else but when we change it up, we love to add different add-ins to our favorite cookies!
Butterscotch Potato Chip Cookies Recipe is putting a spin on classic Butterscotch Chip Cookies! Adding potato chips to the recipe will give you a unique salty and delicious twist! We might have used Butterscotch Chips but you can also use Chocolate Chips if you want chocolate flavor!

Ingredients Needed for Butterscotch Potato Chip Cookies Recipe:
- All-Purpose Flour (2 1/4 Cups)
- Baking Soda (1 Teaspoon)
- Unsalted Butter (1 Cup/2 Sticks)
- Granulated Sugar (3/4 Cup)
- Brown Sugar (3/4 Cup)
- Large Eggs (2 – Room Temperature)
- Potato Chips (2 Cups – Crushed)
- Butterscotch Chips (1 Cup)
Cooking Equipment Needed for Butterscotch Potato Chip Cookies Recipe:
- Baking Sheet
- Silicone Mat or Parchment Paper
- Mixing Bowls
- Whisk
- Hand Mixer or Stand Mixer
- Rubber Spatula
- Cookie Dough Scooper
- Cooling Wire Rack
- Air Tight Container
How to make Butterscotch Potato Chip Cookies Recipe:
1. Preheat oven to 350 F
2. Line Baking Sheet(s) with silicone mat or parchment paper
3. In a Small Bowl, whisk together flour and baking soda
4. In a large Mixing Bowl or Stand Mixer, cream butter, and both sugars until light and fluffy
5. Beat in the eggs until well combined
6. Gradually add flour mixture until mixed
7. Stir in Potato Chips and Butterscotch Chips
8. Divide the batter using a cooking dough scoop
9. Bake for 8-10 minutes on baking sheet
10. Cool for 2 minutes on a baking sheet
11. Transfer to a wire rack to cool completely
12. Store in an air-tight container

- In a small mixing bowl, whisk together flour and baking soda
- In a large mixing bowl or stand mixer, beat the eggs until well combined
- Gradually add the flour mixture until mixed.
- Stir in crushed potato chips and butterscotch chips
- Divide cookie dough on a cooking sheet with a cookie dough scoop or spoon.
- Bake for 8–10 minutes
- After letting them sit for 2 minutes, transfer to a wire rack so they can cool completely.
- Store in an air-tight container
