My family and I love making quiches for breakfast because it is so easy for anyone to make it! Especially when you don’t make a homemade pie crust (You can make it homemade if you would like. Here is a recipe for an easy Pie Crust!). You can find so many versions of quiches that you can make if you have eggs and milk!
This quick and easy recipe is for anyone who enjoys cheese and veggies! This recipe has 3 different cheeses (Parmesan, Ricotta, and Mozzarella Cheese) and 2 different vegetables (Spinach and Cherry Tomatoes).
Another great thing about Easy Cheesy Spinach Quiche is that you can make it in advance!
You can make it the day before you need it and place it in the refrigerator. Preheat your oven to 350 F and let the quiche get to room temperature. If the crust is already dark golden brown, put foil around the crust so it doesn’t get any more toasted. It should take about 15 to 20 minutes in the oven or until the middle of the quiche reaches a temp of 165 F.

Ingredients Needed for Easy Cheesy Spinach Quiche Recipe:
- Refrigerated Pie Crust (1 – 9 Inch)
- Large Eggs (7)
- Spinach (2 Cups – Chopped)
- Whole Milk (2/3 Cup)
- Grated Parmesan Cheese (2/3 Cup)
- Fresh Basil (2 Tablespoons – Chopped)
- Salt (1/4 Teaspoon)
- Ricotta Cheese (1/2 Cup)
- Shredded Mozzarella Cheese (1/3 cup)
- Cherry Tomatoes (3/4 Cup – Halved)
Cooking Equipment Needed for Easy Cheesy Spinach Quiche Recipe:
- Pie Pan (You will one that is at least 9 inches wide)
- Mixing Bowls (You will need one small and one large mixing bowl.)
- Whisk (We highly recommend using a whisk for the egg mixture. This tool will combine all of the ingredients perfectly.)
- Knife (You will need a knife to cut off the excess dough from the pie.)
- Fork (You will need a fork to poke small holes in the bottom of the pie crust.)
- Foil (This will help your quiche to not dry out and it will make sure the top of the quiche doesn’t get too brown)
- Pie Server (This will help you cut the perfect slice of the quiche!)

How to make Easy Cheesy Spinach Quiche:
1. Preheat oven to 350 F
2. Place premade pie crust in the pan. There might be excess dough which you will need to trim off before you follow the next step.
3. Poke the bottom of the crust with a fork and place it in the oven. You will need to bake it for 10-15 minutes until it is par-baked.
4. Whisk together Eggs, Spinach, Milk, half of the Parmesan Cheese, Basil, and Salt in a large mixing bowl.
5. Pour egg mixture into the Pie Crust
6. Mix Ricotta Cheese, Mozzarella Cheese, and the remaining Parmesan Cheese in a small bowl.
7. Add the Cheese mixture on top of the egg mixture.
8. Cover the pan with Foil and bake for 50-55 minutes or until the top is browned and a knife inserted in the center comes out clean.

1 (9-inch) refrigerated pie crust
7 large eggs
2 cups spinach, chopped
2/3 cup whole milk
2/3 cup grated parmesan cheese
2 tbsp. fresh chopped basil
1/4 tsp. salt
1/2 cup ricotta cheese
1/3 cup shredded mozzarella cheese
3/4 cups halved cherry tomatoes
Instructions
Preheat oven to 350F and place pie crust in a pie pan, trimming off any excess. Poke the bottom of the crust with a fork and bake for 10-15 minutes. In a large bowl, combine eggs, spinach, milk, half of the parmesan cheese, basil. and salt and whisk. Pour mixture into the pie crust. In a small bowl, mix together ricotta cheese, mozzarella cheese, and the remaining parmesan cheese. Add cheese mixture to the pie pan. Place foil on the pan and bake for 50-55 minutes. Let cool slightly before serving.
