In the Summer, we have salad for dinner about once a week. Not only do I like how easy they are, but on a hot, mucky day, it’s so refreshing to have a light meal such as a salad.
Walmart had strawberries on sale and considering how great they looked and that we haven’t had them much this Summer, I decided to buy some. Of course, we could just eat them as-is, but my mind turned to yummy various desserts I could make. But this week was also a week that I was determined to spend as little as possible on groceries for dinner. It was then that hubby and I decided that we would use these strawberries as part of a big dinner salad – Fruit and Chicken Salad.
Here’s what our salad consisted of:
- Boneless, skinless chicken breast (seasoned w/ salt & pepper, cooked on stove top, then sliced)
- Bag of salad mix (we buy the big bag at Sam’s Club)
- Strawberries (hulled & quartered)
- Apples (cored and wedges cut into chunks)
- Crumbled Blue Cheese
- Walnuts (halves, coarsely chopped)
- Kashi GoLean Crunch! Cereal
- Dressing (hubby and I used a light balsamic vinaigrette)
As I do with all of our dinner salads, I set out all of the ingredients on the kitchen counter and each member of our family made and assembled their own. Wellie can’t stand the idea of fruit on her salad, so it was none for her. And Mattie isn’t big on the whole “salad for dinner” idea, so he ate almost everything, except for the salad mix, individually on his plate.
A few words about the Kashi cereal — when looking through our cupboards to see if I had anything else that would be good on our salads, I noticed the Kashi GoLean Crunch! Cereal that I got super cheap at Target. It’s these delicious little crunchy clusters and they were a perfect addition to our salads. It’s not the way I thought I would end up using this cereal, but I’m sure we’ll end up using it again.
