- 1 Pound Ground Beef
- 1 Cup Pepperoni
- 6 Eggs
- 1 Cup Milk
- 1/2 Cup Grated Parmesan Cheese
- 2 Cups Pizza Sauce
- 1 Tablespoon Olive Oil
- 1 Green Bell Pepper (Chopped)
- 1 Small Onion (Chopped)
- 8oz Mushrooms (Chopped)
- 3.8oz Can Sliced Black Olives
- 2 Cups Mozzarella Cheese
Instructions
- Preheat Oven to 350 F. Chop the Bell Pepper, Onion, and Mushrooms.
- In a skillet over a medium-high heat, add Olive Oil. When Oil is heated, add Bell Pepper, Onion, and Mushrooms. Sauté until softened, about 5 minutes. Set aside in a bowl.
- In the same skillet cook the Ground Beef until browned. Drain any liquid.
- Spray the 9×13 Casserole Dish with Non-Stick Cooking Spray. Add Ground Beef and Pepperoni (Reserving a few for the top), tossing together slightly.
- Add sautéed Vegetables over the meat layer. Sprinkle with Black Olives, reserving a few for the top.
- In a bowl. whisk Eggs, Milk, and Parmesan Cheese until well blended. Pour over the ground beef and pepperoni mixture.
- Pour Pizza Sauce over Meat, Veggies, and Egg layers.
- Add sautéed Vegetables over the Pizza Sauce layer. Sprinkle with Black Olives, reserving a few for the top.
- Top the casserole with the Mozzarella Cheese and remaining toppings.
- Bake for about 1 Hour or until the eggs are completely set in the middle. Remove from oven and rest for 10 minutes before slicing.
