Ingredients

  • 1 Pound Ground Beef
  • 1 Cup Pepperoni
  • 6 Eggs
  • 1 Cup Milk
  • 1/2 Cup Grated Parmesan Cheese
  • 2 Cups Pizza Sauce
  • 1 Tablespoon Olive Oil
  • 1 Green Bell Pepper (Chopped)
  • 1 Small Onion (Chopped)
  • 8oz Mushrooms (Chopped)
  • 3.8oz Can Sliced Black Olives
  • 2 Cups Mozzarella Cheese

Instructions

  1. Preheat Oven to 350 F. Chop the Bell Pepper, Onion, and Mushrooms.
  2. In a skillet over a medium-high heat, add Olive Oil. When Oil is heated, add Bell Pepper, Onion, and Mushrooms. Sauté until softened, about 5 minutes. Set aside in a bowl.
  3. In the same skillet cook the Ground Beef until browned. Drain any liquid.
  4. Spray the 9×13 Casserole Dish with Non-Stick Cooking Spray. Add Ground Beef and Pepperoni (Reserving a few for the top), tossing together slightly.
  5. Add sautéed Vegetables over the meat layer. Sprinkle with Black Olives, reserving a few for the top.
  6. In a bowl. whisk Eggs, Milk, and Parmesan Cheese until well blended. Pour over the ground beef and pepperoni mixture.
  7. Pour Pizza Sauce over Meat, Veggies, and Egg layers.
  8. Add sautéed Vegetables over the Pizza Sauce layer. Sprinkle with Black Olives, reserving a few for the top.
  9. Top the casserole with the Mozzarella Cheese and remaining toppings.
  10. Bake for about 1 Hour or until the eggs are completely set in the middle. Remove from oven and rest for 10 minutes before slicing.
