Wellie (our 19yr old) wrote to lots of my favorite “famous” people on Twitter and asked them to say happy birthday to me (without me knowing). She wrote a variety of people – a few actors/actresses, a singer or two, and several chefs. Well, most of them didn’t say anything to me (I totally understand), but I did have two people take the time to say happy birthday to me via Twitter:
Tom Colicchio and…
You know…both from Top Chef – among other things (awards, restaurants, television appearances…you name it). Isn’t that cool? I admire the work of both of them – and have always been determined that SOMEDAY I will eat in one of their restaurants. And since both have locations in Atlanta (5 or so hours away), it’s not that unrealistic of a goal. Someday.
And…isn’t my Wellie the greatest kid ever? So sweet that she did this. Thank you, Wellie.
So, here’s the menu plan for this week — which includes our Easter dinner menu:
- Monday: Leftovers (Vegetable Lasagna)
- Tuesday: Lazy Chicken Cordon Bleu
- Wednesday: Southwestern Black Bean Burgers
- Thursday: Spaghetti with Italian Sausage and Simple Tomato Sauce
- Friday: Chicken Carne Asada Tacos
- Saturday: Turkey Sloppy Joes
- Sunday: Easter Dinner – Bacon-Balsamic Deviled Eggs + 2 other varieties, Spiral Ham, Cheesy Potato Casserole, Asparagus (not sure yet how I will be making these), Roasted Carrots, Jello Fruit Salad, No-Knead Overnight Parmesan and Thyme Rolls, plus thinking of making a Cheesecake for dessert
Have a wonderful week and a Happy Easter!
