Champagne Cupcakes

Ingredients

  • Cupcakes:
2 3/4 cup flour
2 1/2 tsp baking powder
2/3 cup butter, softened
1 3/4 cup sugar
2 eggs
1/2 cup champagne
3/4 cup milk
1 tsp vanilla
 
  • Frosting:
3 1/2 cups powdered sugar
1/2 cup butter, softened
1 tsp vanilla
2 tbsp milk
3 tbsp champagne
Gold nonpareils sprinkles
Gold star shaped sprinkles

Instructions

  • Cupcakes:
Preheat oven to 375 degrees and line a muffin tin with cupcake liners. In a large bowl, cream together butter and sugar until smooth. Add in vanilla, and mix. Add eggs one at a time, mixing in between. Stir in champagne. In another bowl, whisk together flour and baking powder. Slowly add dry ingredients to the wet, mixing well in between each addition. Bake for 20-25 minutes until cupcakes begin to turn golden brown. Allow the cupcakes to cool before frosting.
 
  • Frosting:

In a large bowl, mix butter until light and fluffy. Add vanilla and milk, and mix well. Add powdered sugar gradually, mixing well in between each addition. Stir in champagne. Pipe icing onto cooled cupcakes. Top with gold sprinkles.
