The little life hack that had me enjoying stress-free dinners this week comes from Gobble – a meal delivery service. The dinner kits include all the ingredients you’ll need to make your dinner. They are pre-chopped and par-cooked ingredients that are pre-measured for you into the perfect portions you’ll need. For almost all of the ingredients, you just open the packaging and use.
For my Meyer Lemon Gnocchi, I did have to cut the asparagus into thirds, which was very easy to do.
And, I thinly sliced some radish for garnish.
This Meyer Lemon Gnocchi was amazing. I loved the flavor.
I’ve only made gnocchi one other time, so I don’t consider myself to be experienced with it. But I followed the instructions easily and was very happy with how it turned out. I may or may not have snuck a few of these right out of the pan for snacking on.
As I mentioned before, everything is cooked in one pan. After the gnocchi was cooked, I quickly cooked the asparagus, artichoke hearts, and peas. Everything was tossed together gently with a delicious basil pesto sauce.
One thing I really like about the Gobble recipe cards is that they also show you a photo of the plated dinner. This provides great inspiration so you can plate your dinner as beautiful as you would find in a restaurant.
After plating the Meyer Lemon Gnocchi, I garnished with some of the thin radish coins and goat cheese (which also came in the Gobble dinner kit) and served! This dinner was delicious and one that I would definitely pick again.
