Description

This White Chocolate-Ginger Drop Cookies recipe is a simple mix and drop cookie dough that bakes up delicious, soft cookies with plenty of ginger flavor.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 1/2 cup butter (softened)
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup milk
  • 1 large egg
  • 6 ounces white chocolate chips
  • 1/2 cup chopped pecans
  • 1/4 cup crystallized ginger chips

Instructions

  1. Heat over to 375 degrees F. Lightly grease a baking sheet.
  2. In a medium bowl, combine flour, baking powder, ground ginger, and baking soda.
  3. In a separate large bowl with a hand mixer, or the bowl of a stand mixer, beat the sugars and butter on medium until combined. Add egg and milk and beat until smooth. On low, mix in the flour mixture in small batch until combined with butter mixture.
  4. By hand, stir in white chocolate chips, pecans, and crystallized ginger chips.
  5. Drop dough by spoonfuls about 2 inches apart onto prepared baking sheet. Bake for 8-10 minutes or until edges are light golden brown. Remove from cookie sheet and allow to cool on a wire rack.

Notes

–Finely chopped crystallized ginger can be used instead of ginger chips.
