Pizza is a weekly meal in our home — almost always on Fridays. I usually make at least 2 different pizzas. One of our all-time favorites is my super easy Mexican Pizza recipe. But I also like to make a meatless pizza.
One of my favorite veggie toppings for pizza is zucchini. If I make a veggie pizza, it’s always included, with our other favorite vegetables. But in the summertime, when zucchini is in season and at its lowest price, we also enjoy having a pizza that is loaded up on zucchini, such as this one!
Ingredients Needed for 3 Cheese Zucchini Pizza:
- Pizza Dough (1 Pound)
- Zucchini (1 1/2 Pounds)
- Salt
- Olive Oil
- Cream Cheese (8oz)
- Italian Seasoning (1/4 Teaspoon)
- Garlic Powder (1/8 Teaspoon)
- Black Pepper (1/8 Teaspoon)
- Parmesan Cheese (1/2 Cup)
- Mozzarella Cheese (1 Cup)

- Kitchen Knife
- Large Colander
- Paper Towels
- Large Pizza Pan
- Cooking Spray
- Small Mixing Bowl
- Hand Mixer
How to Remove Water from Zucchini
To make this zucchini pizza, you’ll first start with prepping the zucchini slices — which is a very important step for this recipe.
Zucchini has a lot of water in them, so you’ll need to remove as much moisture as possible before placing the slices on your pizza. Be sure to start this process about 30 minutes before you want to make and bake your pizza. And don’t skip this step! If you do, you may end up with a watery pizza and no one wants that.
To remove excess moisture from the zucchini slices, place them in a large colander, placed on top of a bowl. Sprinkle the slices with salt and toss. Let them sit for 20-30 minutes before you turn the zucchini out onto a paper towel lined plate. With more paper towels, pat and press the zucchini to remove the excess moisture.
3 Cheese Zucchini Pizza Recipe Instructions
With your zucchini slices ready, it’s time to make the cream cheese base. Place your cream cheese and seasonings (see bottom of this post for exact ingredients) in a small bowl. With a hand mixer, blend the ingredients together until combined.
For this Zucchini Pizza, you’ll need a pound of pizza dough. You can make your own pizza dough (we like this Food Processor Pizza Dough), but I often buy pre-made pizza dough at my local grocery store. They sell it in 1 pound bags near the meat and deli department.
If your grocery store doesn’t sell pre-made pizza dough, you can make your own pizza dough recipe, buy a pre-cooked pizza crust, or buy a tube of Pillsbury Classic Pizza Crust in the refrigerated dairy area of your grocery store.
Press your dough out onto a greased pizza pan. Spread the cream cheese mixture onto the pizza dough, leaving approximately 1″ on the edges uncovered. Next, top with the mozzarella cheese, followed by layering on the zucchini slices.
How many zucchini slices you use is completely up to you. If you don’t want to use as much zucchini as we have, feel free to use less, leaving spaces in between each one.
After baking, cut your pizza into 8 slices (or however many you prefer). As a large pizza, it will serve 3-5 people, depending on how many slices each person eats.

Ingredients
1 pound pizza dough
1 1/2 pounds zucchini, 1/8″ thick slices
3/4 – 1 teaspoon salt
2 tablespoons olive oil, divided
8 ounces cream cheese, room temperature
1/4 teaspoon Italian seasoning
1/8 teaspoon garlic powder
1/8 teaspoon black pepper
1/2 cup grated Parmesan cheese
1 cup shredded Mozzarella cheese
Instructions
Place sliced zucchini slices in a large colander set on a bowl. Sprinkle zucchini with salt and toss to ensure all slices get salt on them. Allow the slices to release moisture for about 30 minutes, tossing occasionally. Turn zucchini out onto a large plate lined with paper towels. With additional paper towels, pat the slices dry. Place zucchini slices in a bowl, drizzle with 1 tablespoon of olive oil and toss to coat.
Preheat oven to 425 degrees F. Grease a large pizza pan (we used a 14″ pizza pan).
In a small bowl, place cream cheese, Italian seasoning, garlic powder and pepper, and Parmesan cheese. Using a hand mixer, beat ingredients on low until combined.
Press and stretch the pizza dough onto your prepared pizza pan, all the way to the edges. Spread cream cheese mixture over the pizza dough, leaving approximately 1″ on the edges uncovered. Sprinkle the mozzarella cheese evenly on top of the cream cheese mixture.
Layer the zucchini slices, overlapping if necessary, on top of the cheese layers. Continue adding zucchini slices until the pizza is covered or all slices have been used. Drizzle 1 tablespoon of olive oil on top of the zucchini slices.
Bake in preheated oven for 12-15 minutes or until crust is golden brown. Cut into 8 slices and serve.
