This salad is frugal, versatile, and fairly healthy too. We love it and have it several times during Summer months - or whenever we are craving a meal that isn't so heavy.
Road to a Cuisinart (new food processor – part 2)
Remember my food processor story? I used to have a very sad food processor. The bowl broke one day when it slipped off the counter. It slowly started falling apart. The brand name and various words on it (like the important OFF and ON) rubbed off while wiping it clean. I was never sure if she was in speed #1 or speed #10.
I coped with it for a while, even though it had a big hole on the side of the bowl. I would cover the hole with my hand to prevent breadcrumbs and various liquids from

I've been trying my hand at lots of different tomato pasta sauces. The only type I haven't tried yet is making pasta sauce from scratch with fresh tomatoes, but I'm sure I will try that at some point too. But for now, most are made with various combination of canned tomato products - which works for our
Easy Grilled Corn on the Cob
Many years ago, while having a barbecue at the home of a friend, David and I were introduced to grilled corn on the cob. It was prepared by pulling back the husk, removing the silk, and rubbing the cob with butter. The husks were pulled back to cover the corn once again and the husk-covered corn was grilled directly on the heat.
It was delicious - but then again, buttery corn is a huge weakness for me.
Over the years, I've attempted make corn like this. And, I've failed every time. Laugh
Menu Planning Before Moving
At the end of the month, our family is moving from the East coast to the West coast. It's a big move, which means the items in our freezer and refrigerator must be used or we will have to give them away. The move is expensive, so while giving items away will make someone happy, it will make my finances much more happy to know that we have used what we have on hand. Needless to say, it's use it or lose it time.
We've had big moves like this before, so I have learned quite a bit, including how to

If you love enchiladas like our family does, then you must try making homemade enchilada sauce.
Until recently, I used only canned enchilada sauce. In California, I had several to choose from, but I would usually go with the least expensive one. I do remember finding the El Torito brand of enchilada sauce at
Black Bean & Beer Soup
I know some have soup for dinner all year, but I'm not a fan. Soup, stews and similar things belong in the Winter. And maybe in Autumn.
I'm not sure what got into me when I put Black Bean and Beer Soup on the menu this week. Summer officially starts in just over TWO weeks! I had hundreds of dinner choices and I picked - of my own free will - a soup for dinner.
But, this is what happened: We planned our Memorial Day weekend and I knew my husband was going to buy some beer. I knew that one
Real Beef Stroganoff
Confession: I have never made beef stroganoff without using canned soup.
Every time I've made it, I prepared it with canned cream of mushroom soup. I'm not embarrassed, although I am sure there are some who think I should be, but it was a quick and easy meal that my family (particularly the guys in the house) enjoyed. I never really considered that I didn't need a can of soup.
But, guess what? I don't.
In the iPhone app "How To Cook Everything", there is a recipe called Real Beef
Grilled Spicy Shrimp Recipe
Like many others, our family has a barbecue on Memorial Day. Usually we do burgers or chicken. Or maybe some steaks. But this year we decided to grill shrimp - healthy, light and easy.
We've grilled shrimp before, but it was not memorable at all. I'm not even sure what we put on it. Probably some packet of something. But I'm learning that I don't need seasoning packets from the store, but I do need to figure out a way to make this our best grilled shrimp ever.
In comes my decision to cook
Mark Bittman Week – Menu for Week of May 31
It is with great pleasure that I announce my menu plan for this week is based ENTIRELY on Mark Bittman's app called "How To Cook Everything". How cool is that? You might recall when I recently shared my top 5 cooking apps. It was while I was writing that post that it dawned on me that I should do a menu plan with only dishes I found in his plan - so here I am!
Want to know something even cooler? I get to share my app happiness with all of you!
I have 5 copies of Mark's best selling app to
