For this Autumn Apple and Sausage Couscous, I’m using one of my favorite Hillshire Farm products. It’s their Gourmet Creations Premium Smoked Sausages. I like all of the flavors, but one that I love is the Hillshire Farm Gourmet Creations Chicken Apple with Gouda Cheese Chicken Sausages, which is particularly great in the Autumn months.
To make your Autumn Apple & Sausage Couscous, you will begin by slicing and pan frying one package of the Hillshire Farm Gourmet Creations Chicken Apple. Since these are already fully cooked, they brown up fairly quickly. Each slice gets flipped over so the other side can brown and then they are set aside while the rest of the ingredients are prepared.
Next, you’ll slice up two granny smith apples and 1 medium onion. I love having apples in main dish recipes in the fall. The apple and the onions are fried up in a pan with a bit of butter. Give the apples a squeeze of some lemon juice too. After they become tender and beginning to brown, remove them from the pan and set them aside with the sausages. You will also toast pecans, which give a wonderful crunch to this recipe.
Of course, you can’t have a couscous recipe without couscous. If you have never cooked couscous, rest assured that it’s easy — even easier than rice. I buy a box of it in the area near the rice at the grocery store. Follow the directions the package you buy and it will turn out perfect. And as my kids will even tell you: “it’s so nice, you have to say it twice”.
Once the couscous is finished, you are ready to toss everything together. Mix in the Hillshire Farm sausage, apples & onions, toasted pecans, and dried cranberries. Season with some salt and pepper and it’s ready to be served!

Ingredients
- 1 12- ounce package Hillshire Farm Gourmet Creations Chicken Apple Sausage (sliced)
- 1–2 tablespoons butter
- 2 granny smith apples (cored and sliced)
- 1 medium onion (chopped)
- 1 lemon or a splash of bottled lemon juice
- 5 cups cooked couscous
- 3/4 cup dried & sweetened cranberries
- 3/4 cup chopped pecans
Instructions
- In a frying pan over medium heat, cook sausage slices. Flip slices over to allow each side to brown. When each side is browned, remove sausage from pan to a bowl or plate.
- In the same frying pan, melt butter. Cook apples and onions in butter over medium heat. Squeeze lemon over apples or give a splash with bottle lemon juice. Cook until apples and onions are becoming tender and slightly browned. Set aside with sausages.
- In an ungreased skillet, add chopped pecans and cook over medium heat, stirring constantly. Cook until pecans are golden brown. Remove from heat.
- Combine the sausage, apples, onions, cranberries and pecans with the couscous. Season with salt and pepper. Serve!

Just happen to have Hillshire Farm chicken sausag and always have apples and onions. Even have some quinoa cooked up so am sure I could substitute that for couscous! Thanks fir super recipe!!

Everything about this looks delicious…and since the apple is cooked, I can actually eat it without having an allergic reaction! I love apples but I can’t eat them raw. I get tired of apple pie. 😉
