Okay, tonight’s dinner is burritos. I don’t really do anything special for them but I thought maybe some would like to hear the details of “our” burritos:
- I have started making my own refried beans. It is fairly easy to do if you plan ahead, so much less expensive, and better tasting. I usually buy a 4 lb bag of pinto beans (costs me about $2.50) and cook them all up in advance. I freeze what I know I will need for dinners in individual freezer bags (two different sizes, one with less for side dishes to our Mexican meals, another with more for meals like burritos). There are lots of different ways to cook refried beans — I usually soak my beans overnight and the next day rinse them and put them in a pot and cover with water. I bring them to a boil and then simmer them for a couple hours. When they are tender, I drain off most of the water (hard to say how much I drain off)…I want , start mashing them up over a low-medium heat, constantly stirring them, add some oil (or bacon grease if I have it, or lard sometimes), garlic, salt, pepper — I’m telling you, they are really good. - I usually cook “taco”-like meat for our burritos. When I make taco meat, I cook 1-2 lbs of ground beef, add a diced onion, and a diced potato — yep, potato…my tacos, burrito meat, etc. almost always has cooked potato in it…love it. At the end I add taco seasoning.
- I usually make Spanish rice for the burritos too. Some of us put some in our burrito, some of us put it on the side. I make really great homemade Spanish rice for most of our Mexican meals, but for some reason, when I have burritos, I a lot of times use boxed variety in the store (like Rice-a-roni).
- And then we have all the standard favorites too — cheese, salsa, sour cream. I personally like sliced avocado in mine.
