Um, does anyone know where summer went? How could it be that we are now in the middle of August? I feel like it just started yesterday and while we’ve have a lot of fun, I’m not so sure I’m willing to let it go quite yet. There was so much more I wanted to do! But, I also realize we’ve had lots of summer fun.
We went to the San Diego Zoo, which was the first time for our girls (we had been before with our boys). It was the first time our 24-year-old had EVER been to a zoo.
We went to San Diego Comic-Con again — even camping out in line one night just so we could get into The Walking Dead panel…
…and David and I finally went to the Stratosphere Hotel and Casino, where we dined at the top, with amazing views of the Las Vegas valley. It was so cool.
There was lots of other fun stuff too. We went to the movies a bunch of times — we loved Guardians of the Galaxy! We also went bowling, hung out with friends and family, and of course, there was LOTS of great food. We enjoyed summer produce, cooked out on the grill, and I had lots of fun making frozen treats to cool us down. You might even call this the “summer of the popsicle”. Ever since buying my new favorite popsicle mold, I’m obsessed with making new and creative varieties. Needless to say, the kids are loving them.
If you are looking for a fun summer treat for the coffee lovers in your house — especially if they are crazy about coconut too — then this is one thing you’ll want to try before the summer ends.
These Coconut Mocha Pops are also amazingly easy. In a bowl, you’ll mix together some International Delight Iced Coffee in their Mocha variety and a can of coconut milk.
The third ingredient is shredded coconut. Add about a 1/2 tablespoon to each popsicle mold section before filling. While it might be tempting to mix the coconut into the mixture, I find that this works better so that each popsicle will get an even amount of coconut. After adding the coconut to each section, you’ll fill them with the Iced Coffee and coconut milk mixture. Using an extra popsicle stick, give each section a gentle stir to get the coconut all mixed up with the mixture. Then, add your sticks and freeze!
When they are done, you’ll have this deliciousness — a perfect mixture of coffee and coconut. They are so good and with them being so easy, you can make up a batch any time you are craving them (yes, even after the summer, I won’t tell).

Ingredients
- 13.5 ounce can coconut milk (full-fat, not light)
- 1 2/3 cups International Delight Iced Coffee (Mocha variety)
- 5 tablespoons shredded coconut (divided)
Instructions
- In a bowl, mix together the Iced Coffee and the coconut milk with a whisk.
- Place 1/2 tablespoon of shredded coconut into the bottom of each popsicle mold section. Fill each popsicle mold section with the Iced Coffee and coconut milk mixture. With an extra popsicle stick or a butter knife, gently stir each section to allow the coconut to mix with the mixture.
- Add sticks and freeze according to the instructions of your popsicle mold.
