This Coconut Pineapple Rice recipe is a fun and easy side dish for family weeknight dinners.

I love having a simple grilled or pan-seared chicken breast for dinner. Even with just a few herbs, or maybe a simple teriyaki marinade, a chicken breast can be an easy and delicious option. To serve with this simple chicken breast, I enjoy having vegetables and side dishes that might be a bit more fun or different than we usually have.
This Pineapple Coconut Rice is exactly that kind of easy side dish. It’s full of tropical flavor and it makes plain rice all fancy. The pineapple gives you that sweet and tart flavor, while the coconut is chewy and adds additional sweetness. I also add in chopped macadamia nuts which give you just enough of a crunch.
The rice I used was Success® Rice, which is the original no mess, no measure boil-in-bag rice that cooks perfectly every time, in less than 10 minutes. I used the Success Whole Grain Brown Rice in this recipe and I was pleasantly surprised by how fast it was — it cooks in 1/4 of the cooking time of regular brown rice. Another bonus: the white and brown rice and sit for up to 30 minutes before being served. It was foolproof, so if you are someone like my mother-in-law who always said she couldn’t cook rice…well, yes you can!
To give this Coconut Pineapple Rice plenty of coconut flavor, part of the water is substituted with coconut milk. I used a 14 oz can of coconut milk, which gives you about 1 3/4 cups of coconut milk as you can see in the image below.
After the rice is down, you drain and place it in a bowl. It’s then tossed with bite size pineapple chunks, coconut flakes, and chopped macadamia nuts. Season with a bit of salt to taste and it’s that easy!

Coconut Pineapple Rice Recipe
- Yield: 4 servings
- 4 1/2 cups water
- 14 ounce can light coconut milk
- 2 bags Success Whole Grain Brown Rice
- 1 cup pineapple chunks
- 1/3 cup coconut flakes
- 1/3 cup chopped macadamia nuts
- Salt (to taste)
- In a large saucepan, combine water and coconut milk. Submerge bags of rice in mixture. Bring to boil and boil uncovered for 8-10 minutes.
- Remove bag from water with fork and drain. Cut open bag and empty rice into bowl. Combine rice with pineapple chunks, coconut flakes and nuts. Season with salt, to taste. Serve.
–I used light coconut milk, but if you prefer, you can use regular coconut milk.
–To give an extra nutty flavor to the rice, toast the coconut before tossing into rice.
