I’m a recent convert to Caesar salad. Several years ago, when my sister and I went out to lunch, we had a choice of side salad or Caesar Salad with our meal. We always chose the side salad in these cases, but that time, she went for the Caesar. She had tried it at some point with her new husband, and was hooked. But me? I stayed away. It looked so boring anyway – some lettuce, croutons, and Parmesan cheese? No thanks, I’ll take my colorful salad any day.
Fast forward to more recent times, I was at an event. The salad that was served: Caesar salad. Ugh. But, I was starving. So, I tried it and IT WAS GOOD. Since then, I’ve had Caesar salad many, many times. I don’t always pick it over the side salad (actually, I still probably pick the side salad more often), but I still consider it to be one of my favorites.
This recipe is a quick and easy twist on the usual Caesar salad. I’m absolutely in love chicken salad sandwiches — especially when they are served on a croissant roll — so this is a delicious way to combine Caesar salad with chicken salad.
One of my favorite things about this recipe is that you can adjust it to your liking. You can add celery if you want that extra crunch. You can cook chicken specifically for this sandwich, or you can use use leftover chicken from another dinner. You can even buy a rotisserie chicken from the grocery store (I love getting the ones at Costco) and use the meat from that to make this recipe. Of course, you can serve it with more dressing and adjust the salt and pepper to your personal preference.
If croissants aren’t your thing (is this possible??), you can serve it on any bread of your choice. It’s also great with crackers, which is my 18-year-old’s favorite way of eating any type of chicken salad mixture.

Easy Chicken Caesar Croissant Sandwich Recipe
Description
This quick and easy Chicken Caesar Salad Sandwich recipe is a twist on the usual Caesar salad and chicken salad sandwiches. A great way to use leftover chicken. Serve on croissants or your favorite bread.
Ingredients
- 1 cup chicken (cooked and cubed)
- 1–2 green onions (thinly sliced)
- 1/4 cup cranberries (chopped)
- 3 tablespoons creamy Caesar dressing
- 1 tablespoon honey mustard
- Spinach
- 6 in mini croissants (as shown the photo)
- Sat and Pepper to taste
Instructions
- Mix chicken, onions, cranberries, dressing and honey mustard in a bowl. Refrigerate overnight or assemble and serve sandwiches.
- To assemble, place 1-2 small spinach leaves on croissant, top with chicken mixture and serve.
