While I’ve made enchiladas many, many times for my family, it was only a few years ago that I tried making homemade enchilada sauce from scratch. I tried it out of desperation — our grocery store in Virginia only carried one brand and while it was ok, I figured I could make one better. I gave it a shot and it was better — even better than I had hoped for.
Today, I still make enchilada sauce from scratch, but sometimes I do still buy cans of it at the store. Now that we live in Las Vegas, I have several great brands available to me in our grocery stores, so I’m not just stuck with one brand that I’m not so crazy about. If I’m short on time or just don’t feel like making it fro scratch, I’ll pick up a can (and my family eats them just the same).
When it comes to making the actual enchiladas, I don’t usuallygo by a “recipe”. The enchilada sauce is the part I do rely on a recipe for — either one of my own or another one that sounds good to me. With a good enchilada sauce recipe, fillings (like shredded chicken, cheese, etc) and tortillas and I’m good to go.
