Parmesan Crusted Tilapia

Parmesan Crusted Tilapia
Until about a year ago, I never made fish at home. David always said he didn’t like it (that’s changed), and fish was very rarely, if ever, one of the meals I had as a child so I had limited experience with it. I found fish to be a bit intimidating. It just seemed like something I would definitely screw up if I ever tried to cook it.

But here we are. Sometime last year I decided it was time to get past these fishy phobias. We had started Weight Watchers and I wanted some other options for dinner that were tasty, yet low in calories. The healthy part was a bonus too. I’ve tried a few different recipes with fish (our favorite is Fish Tacos), but one definite favorite is this Parmesan Crusted Tilapia.

My Inspiration: Parmesan Encrusted Tilapia at Sam’s Club, in the frozen food section. I’ve bought it a few times – it’s very good and super easy to make.

Parmesan Crusted Tilapia

Ingredients

  • 1/2 cup All Bran cereal
  • 1/4 cup Parmesan cheese (grated)
  • 2 teaspoons paprika
  • 1 tablespoon flat leaf parsley (finely chopped)
  • 4 oz tilapia fillets (4 each or so)
  • Olive Oil (optional)
  • Lemon Juice (optional)

Instructions

  1. Preheat the oven to 400°. Line baking sheet with foil and spray with cooking spray or lightly grease in a method you prefer. (I actually did a light drizzle of olive oil on my baking sheet after spraying it with cooking spray)
  2. In a food processor, pulse the cereal, cheese, and paprika. When finely ground, pulse in parsley until fully mixed in. Place mixture in a shallow dish. Dredge fish fillets in the cereal/cheese mixture and place on prepared baking sheet. Bake 10 to 12 minutes, or until thickest part is opaque and flakes easily. If you wish, you might want to place under a broiler for a couple minutes for extra crispiness (I didn’t as I don’t have a broiler).

Notes

–I did not dip my fish in any extra liquid before dredging it, however, if you feel that it does need it to make the cereal/cheese mixture adhere, I would recommend dipping in some lemon juice.

    I love tilapia. We get it frozen from sam's club and cook it all the time. This looks like a great recipe. I always do it the same old way and it gets boring, so I'll have to try this. 🙂

    This looks like a great way to prepare tilapia! We try to eat fish about once a week since we all love it… I'm always looking for new ways to prepare it.
