Okay, tonight's dinner is burritos. I don't really do anything special for them but I thought maybe some would like to hear the details of "our" burritos:I have started making my own refried beans. 1 bag plain frozen meatballs (I believe the bag I buy has like 40-50 meatballs in it)
1 can cranberry sauce
1 jar grape jelly
1 jar chili sauce
Mix cranberry sauce, jelly, and chili sauce crockpot. Mix together. Put meatballs in a crockpot, stir with sauce. Cook on low 6-8 hours. I've also had friends do this with little cocktail wieners and also sliced kielbasa sausages -- it's all good!
Mexican Lasagna
I finally found an old recipe box that I have been missing for a while. It's one I started a LONG while back, it's been in packed up box for over 5 years...probably much long than that. Anyway, one recipe I had to share from it is Mexican Lasagna. I had not made it in a long time but just made it last week. Warm weather is coming here in the US, so while I am thinking about it, I wanted to be sure post one of my favorite warm-weather desserts.
Cherry-Topped Icebox Cake
20 whole graham crackers
2 cups milk
1 package instant pudding mix -- chocolate or vanilla, 6-serving size
1 3/4 cups Cool Whip -- thawed
2 cans cherry pie filling -- 21 oz. each

1/2 cup mayonnaise
8 oz. pkg. cream cheese, softened
And any one (or be wild and add more than one) of the following: can of diced green chilies (drained), thick-and-chunky salsa, bacon (cooked and crumbled, of course), chopped green onions, 1 cup or so of shredded cheddar cheese, 1/2 cup finely diced onion, chopped spinach (thawed and drained well), 4 oz chopped olives (drained), etc.
Spread on flour tortillas (you'll probably need at least 6 of 'em).
Memorial Day
Today is Memorial Day -- the unofficial start of summer. In the summer, we love to have cook-outs and BBQ's, so today is no different.
