I was checking out some restaurant coupons that came in the mail and saw an advertisement for a new tilapia dish that one place was offering. It sounded and looked really good and since I'm often on the look out for healthy choices at restaurants, I thought for a second about how David and I could stop in there during an upcoming shopping trip.

Homemade Macaroni and Cheese (big batch)
Over the last year, I've changed a lot about the way I cook and the ingredients I use. I've lowered the fat and calorie content in many dishes and in a few cases, I have stopped making a previous favorite.

Chicken Cordon Bleu
Chicken and my favorite cheese. All wrapped up in a cute little bundle - it doesn't get better than this. But I what I love the most about Chicken Cordon Bleu is that it appears so fancy and somewhat complicated, but it's pretty simple and not that hard to do. Really. It's the kind of meal you can make and have people ooh-ing and aah-ing and thinking you are some master of the kitchen.

This past week, David and I were having a mid-afternoon snack of a few Triscuit crackers, plus a Laughing Cow cheese wedge. In my efforts to eat slower (an ongoing goal I have), I was taking very teeny tiny bites and making each cracker last as long as possible.
