Leftover Thanksgiving turkey is a must in our house. We don’t buy a turkey with just the right amount to feed our guests. Never. We buy a turkey with the whole plan to have leftovers. And if that one turkey won’t ensure leftovers, we might just cook a 2nd turkey. As a matter of fact, for the past few Thanksgivings, we’ve made two turkeys. One is cooked traditionally in the oven, while the other is smoked outside on our Big Green Egg.
Most of our leftovers are used for turkey sandwiches. But with our whole focus on leftover Thanksgiving turkey, there is generally enough to use the turkey leftovers in other recipes. Today, we’re sharing an easy and delicious way to use those leftovers: Leftover Turkey and Pear Pizza recipe.
One thing I particularly like about this recipe is that the days following Thanksgiving, we generally have some downtime for watching movies, playing games, or just hanging out around the house. Pizza is perfect for those activities. And with this recipe being so easy to make, you’ll have it done quickly so you can get out of the kitchen and enjoy the fun with your family and guests.
This Leftover Turkey and Pear Pizza recipe uses a homemade pizza crust that is made with just two ingredients: self-rising flour and greek yogurt.
It’s very easy to make, but if you prefer something even more simple, you can also grab a bag of pre-made pizza dough from your grocery store (I buy this at my local Winco in the deli area). Or, you could even buy a roll of Pillsbury Pizza Crust, which is sold in the refrigerated biscuit area.
Once the pizza dough has been rolled out, you simply top it with mozzarella cheese and your leftover Thanksgiving turkey. Bake until the cheese begins to brown and when it’s done, top with your pear slices and drizzle with balsamic vinegar.

Don’t have leftover Thanksgiving turkey? This recipe is also great for leftover chicken. Additionally, you can drizzle this pizza with a balsamic vinegar glaze or reduction, instead of regular balsamic vinegar. You can make this glaze yourself, but we enjoy a pre-made variety for convenience, such as Fini Balsamic Glaze or DeLallo Balsamic Glaze.

Description
This Easy Leftover Turkey and Pear Pizza recipe uses leftover Thanksgiving turkey, sliced pears, mozzarella cheese and a drizzle of balsamic vinegar for a delicious appetizer or meal. This recipe also features an easy pizza crust that requires only two ingredients.
Ingredients
- 1 cup plain Greek yogurt
- 1 cup self-rising flour
- 1 tablespoon cornmeal
- 1 cup cooked turkey, cubed
- 1 cup shredded Mozzarella cheese
- 1 pear, thinly sliced
- 1/3 cup balsamic vinegar or balsamic vinegar glaze/reduction (more or less depending on preference)
Instructions
- Preheat oven to 400. Line a baking sheet with parchment paper.
- In a small bowl, add yogurt and flour, mix well. The mix will seem to be dry at first but will come together. Knead the dough with your hands until blended well.
- Roll dough onto a floured surface until about 9″ x 13″ in size.
- Sprinkle corn meal onto parchment paper and transfer your dough to the paper.
- Top with cheese and turkey and heat for 10-12 minutes or until the cheese begins to brown.
- Top with pears and drizzle with balsamic vinegar. Cut with a pizza cutter and enjoy.
Notes
–If you prefer, you can top your pizza with the sliced pears before baking.
–If you wish, you may want to drizzle this pizza with a balsamic vinegar glaze or reduction. You can make this yourself, but we enjoy a pre-made variety for convenience, such as Fini Balsamic Glaze or DeLallo Balsamic Glaze.
–Adding a light sprinkle of blue cheese crumbles right after baking would also be delicious.
