To celebrate summer and June Dairy Month, I’m sharing 3 easy summer recipes: Greek Yogurt Fruit Dip, Chocolate Coconut Creme Fondue, and Watermelon Havarti Bites.

I just can’t believe that Summer is here. Well, “unofficially”, but still. It seems like it was just yesterday that we were all celebrating Spring and them BOOM! Here comes Summer strolling in. Of course, warm (hot) weather has already been plentiful here in Vegas, well before Memorial Day weekend.
Living in Vegas, we really do have year round outdoor weather. We have a lovely patio table that we bought last summer that we love to hang out at while we BBQ. We don’t really use the dining room table that we have in our house, so the patio table has become the most used place for family hang outs.
Sometimes though, the weather is so hot in the summer that we don’t want to hang out on our patio during the day. But when the sun goes down, we head out to the patio to hang out and take along some snacks or treats to munch on.
I try to keep most on the healthier side and with June Dairy Month just a few days away and all the great everyday dairy products that are low fat or light, it’s easy to do. This past week, we headed on over to Vons (our Safeway affiliate store here in Vegas) to pick up some diary items (here’s photos from my full Vons shopping trip).
SAVINGS TIP: From May 29 – July 2, you can save $5 when you spend $15 on dairy products at Safeway & affiliate stores (such as Vons, Pavilions, Tom Thumb Stores, Genuardi’s, Randalls, Dominicks). This will be a great time to stock up and save on your favorite dairy products!
Greek yogurt can always be found in my refrigerator since David loves having it for snacks and lunch. I’ve been enjoying trying some new things with it and this Greek Yogurt Fruit Dip is a super fun way to serve fruit — plus it won’t take you much more than 2 minutes. It also only takes two ingredients: greek yogurt and cream cheese.

My kids LOVE watermelon, so I’m always trying new ways of serving it. These Watermlon Harvati Bites are so easy to make and were devoured by everyone. All you will need is Kraft Havarti Cheese Slices, watermelon, mint leaves or lettuce, toothpicks and a bit of salt.

My kids will say that I saved the best for last. Heading out to our patio after dinner to enjoy dessert is one of our favorite things to do. Fondue is not only delicious, but it’s a fun activity…and a dessert fondue is definitely a kid favorite.
To make this Chocolate Coconut Creme Fondue, you will only need two ingredients, plus additional items for dipping. Place one 12 oz bag semi-sweet chocolate chips into a microwave safe bowl with Coffeemate Coconut Creme coffee creamer. Melt slowly and stir frequently — we usually put it in for 15 seconds then remove and stir and then put it in for another 15 seconds until completely melted and smooth.
Pour your fondue into a bowl and serve with an assortment of dippable treats, like marshmallows, coconut macroons, fruit slices, and cubes of pound cake. Be sure to have some skewers or forks handy and sharing some fondue etiquette (no double dipping and removing the food from the skewer before putting it in your mout) is probably a good idea if this is the first time you’ve had fondue with your kids.

Ingredients
- 3 ounces containers Greek Yogurt (6 , your choice of flavor)
- 1 8 ounce brick of cream cheese (softened)
Instructions
- In a bowl with a mixer, beat cream cheese until smooth and creamy. On low, beat in yogurt until smooth and fully combined. Place in a serving bowl and serve as a dip for fresh fruit.
