Homemade Cashew Brittle is a deliciously sweet candy that is perfect for the holiday season! It is also great if you need a gift for someone who has a sweet tooth. You can use whatever kind of nut that you would like but we highly recommend cashews! It pairs very well with the sweetness of the brittle.
Making candy can be intimidating. It can easily burn if you don’t watch the thermometer, use the wrong spoon, scrap the pot when cooking, etc. But we are here to show you that it doesn’t have to be scary! Making delicious candy for the holidays can be an easy task!

Ingredients Needed for Homemade Cashew Brittle:
- Granulated Sugar (1 1/2 Cups)
- Water (1 Cup + 1 Teaspoon)
- Light Corn Syrup (1 Cup)
- Unsalted Butter (1/4 cup + extra for the baking sheet)
- Cashews (Roasted and Salted – 2 1/2 Cups)
- Baking Soda (1 1/2 Teaspoons)
- Vanilla Extract (1 Teaspoon)
Cooking Equipment Needed for Homemade Cashew Brittle:
- Baking Sheets
- Heavy-Bottomed Saucepan
- Rubber Spatula
- Candy Thermometer
- Small Mixing Bowl
- Meat Mallet (or another heavy object)
- Airtight Container

How to make Homemade Cashew Brittle:
1. Heat oven to 200 F to keep the baking sheet warm.
2. Combine the Sugar, Water, and Light Corn Syrup in a heavy-bottomed saucepan.
3. Cook over medium heat, stirring occasionally until a Candy Thermometer reaches 240 Degrees F (Soft Ball Stage), about 25 minutes.
4. While Caramel is cooking place the baking sheet in the oven to keep it warm.
5. Remove Caramel from the heat and stir in Butter and Cashews.
6. Return to heat and cook until the Thermometer reaches 300 Degrees F (Hand Crack Stage).
7. Whisk the Baking Soda, Water, and Vanilla Extract in a small mixing bowl.
8. Remove the Brittle from the heat and immediately stir in the Baking Soda mixture until light and foamy.
9. Remove the Baking Sheet from the oven and generously coat it with Butter.
10. Pour the Brittle mixture onto the prepared Baking Sheet and spread quickly to 1/4 inch thick with a Large Spatula (to help you spread the mixture make sure the spatula is buttered.)
11. All the Brittle to cool completely.
12. To remove the Brittle, place a larger baking sheet on the counter then turn the baking sheet with the brittle upside down on top of the larger baking sheet. Hit the sheet with a meat mallet or another heavy object, Be sure not to damage your baking sheets.
13. Break the Brittle into pieces and store it in an airtight container at room temperature.
Easy Cashew Brittle Recipe
