On the 4th of July. I made two big pitchers full of Iced Green Tea for drinking (we use Bigelow Tea bags). One got the fruity treatment — it was filled with lots of frozen pineapple. The other stayed traditional so that everyone could choose which one they preferred.
I also made a simple syrup for those who wanted their tea sweetened. Simple syrup is basically just a mixture of sugar and water, which are heated together to make a syrup. It’s used in all sorts of ways: sweetening iced tea, in cocktails, or even a cake making. The great thing about simple syrup is that your guests can add it to iced tea and they don’t have to stir, stir, stir to get sugar to dissolve. Simple syrup dissolves quickly into the tea and people can get on with the festivities.
But the fun part came in with the adults-only simple syrup I made: Malibu Rum Simple Syrup. Ooooh yeah!
My husband, who loves Malibu Rum, got a new bottle of it for Father’s Day from our oldest son. When were thinking of more adult iced tea beverages for the 4th of July, and we thought it would be fun to add some extra flavor to one of our simple syrups by adding Malibu Rum to it.
And just like that, an easy-to-use Malibu Rum Simple Syrup was created. It sweetens up your tea and gives a really great coconut flavor. Of course, if you are looking for more of a bang with your iced tea, you might just want to pour the Malibu Rum straight into your tea, but for a party, this is a great option for your iced tea bar.

Ingredients
- 2 cups sugar
- 1 cup water
- 1/2 cup Malibu Rum
Instructions
- In a small saucepan, heat water to boiling. Stir in the sugar gradually and heat over medium heat until sugar is completely dissolved. Remove from heat. Stir in Malibu Rum. Allow syrup to cool completely. Store in a glass container (preferred) in the refrigerator. Use to sweeten iced tea or in cocktails or recipes, as desired.
