Mug cakes are one of my favorite things to make because they are a single-serving dessert that can be made in the microwave. They are also great if you want to limit your time in the kitchen.
This Mint Chocolate Mug Cake is so delicious! It is filled with different kinds of mint and chocolate items. As a big fan of both, this was right up my alley. We used Girl Scout Thin Mints for the cookie pieces, but a different brand of Mint Chocolate cookies will work! We would highly recommend Mint Oreos or Keebler Grasshopper cookies if Thin Mints are not available.

Ingredients for Mint Chocolate Mug Cake:
- All-Purpose Flour (1/2 Cup)
- Unsweetened Cocoa Powder (2 Tablespoons)
- Baking Powder (1/2 Teaspoon)
- Milk (1/4 Cup + 2 Tablespoons)
- Vegetable Oil (1 1/2 Tablespoons)
- Peppermint Extract (1/2 Teaspoon)
- Andes Crème de Menthe Thin Mints (1/4 Cup – Chopped)
- Any Mint Chocolate Cookies you want (4 – Crushed | We used Thin Mints but we also recommend Mint Oreos or Keebler Grasshopper.)
- Whipped Cream, Mint Leaf, or/and extra Mint Chocolate Cookie (for garnish)
Cooking Equipment Needed for Mint Chocolate Mug Cake:
- Food Processor
- Large Mixing Bowl
- Whisk
- Rubber Spatula
- Kitchen Knife
- Cutting Board
- Microwave-Safe Mug
- Non-Coating Spray
How to make Mint Chocolate Mug Cake:
01. In a food processor, pulse the cookies into small pieces and set aside.
2. In a large mixing bowl, whisk together the flour, cocoa powder, and baking powder.
3. Add the milk, oil, and peppermint extract. Stir well to incorporate.
4. Chop the Andes chocolates. Add them and cookie pieces to the batter.
5. Spray your mug with non-coating spray. Transfer the batter to the mug.
6. Microwave on high for 2 – 2 1/2 minutes (depending on wattage) or until the cake is done and springs from the sides of the mug.
6. Garnish with a dollop of whipped cream and Mint cookie

- Peppermint Extract (1/2 Teaspoon)
- Andes Creme De Menthe Thin Mints (1/4 Cup – Chopped)
- Mint Chocolate Cookies (4 – Crushed)
- Garnish (Optional): Whipped Cream, Mint Leaf, Mint Chocolate Cookie
Instructions
- In a Food Processor, pulse the cookies into small pieces and set aside.
- In a large mixing bowl, whisk together the flour, cocoa powder, and baking powder.
- Add the milk, oil, and peppermint extract to the dry ingredients. Stir well to incorporate.
- Chop the Andes Chocolates. Add them and the cookie pieces to the batter.
- Spray your mug with a non-coating spray. Transfer the batter to the mug.
- Microwave on high for 2 to 2 1/2 minutes (Depending on wattage) or until the cake is done and springs from the sides of the mug.
- Garnish the top of the cake with Whipped Cream, Mint Leaf, or/and extra Cookies.
