My kids — who are young adults and teens — love to make single-serving desserts for themselves. There are times when they get a sudden craving for something sweet they can head into the kitchen and easily mix up a mug cake. It’s also great for college students living in a dorm or small families or couples who might not want a make a full dessert recipe with many servings. It’s also perfect anyone who likes the portion control that comes from making a single-serving dessert — no leftovers to tempt you!
The single-serving dessert we are sharing today is Pumpkin Nutella Microwave Mug Cake recipe. It’s a delicious fall dessert that has the added bonus of Nutella — a chocolate hazelnut spread. This recipe makes enough for a large mug that holds about 10-12 ounces. If you would like to use small mugs, simply half this recipe.
Pumpkin Nutella Microwave Mug Cake Ingredients
Chances are, you probably have most of the ingredients on hand to make this Pumpkin Nutella Microwave Mug Cake recipe. It uses the usual kitchen staples of all-purpose flour, sugar, milk, butter, and baking powder. You will also need pumpkin puree, Nutella, and two spices: ground cinnamon and pumpkin pie spice. You will also need a microwave-safe mug.
For the pumpkin puree, you will only need to use 4 tablespoons per mug, which means that you will end up having a lot of leftover pumpkin. We’re not fans of wasting ingredients, so you have a couple of options. You can refrigerate the leftovers for about a week, you can freeze it for several months, or you can use it in another recipe that uses pumpkin puree. We have a handy list of over 100 ways to use leftover pumpkin puree.
It should also be noted that while we used actual Nutella for this recipe, you can substitute any chocolate spread.
How to Make Your Pumpkin Nutella Microwave Mug Cake
To make your own Pumpkin Nutella Microwave Mug Cake, you’ll first combine milk, sugar and melted butter in your mug. Then, you’ll then gradually add the flour and baking powder a little at a time. Whisk all this together until smooth and all lumps have dissolved.
Next, stir in the pumpkin puree, ground cinnamon and pumpkin pie spice to the flour mixture in the mug.
The final step before microwaving is to add 2 tablespoons of Nutella spread into the mixture and stir with a fork to swirl it into the pumpkin/flour mixture. Place the mug in your microwave, and heat on HIGH for 30 seconds. Continue to microwave in 15-second increments until the cake is done in the center.
Please note: microwaves can vary greatly, but for this recipe, it took a total of 2 minutes. Yours may take less or more time depending on your microwave and its wattage.
While your Pumpkin Nutella Microwave Mug Cake mug cake is cooling, microwave 1 tablespoon Nutella for about 30-45 seconds to soften. Drizzle on top of the Pumpkin Nutella Microwave Mug Cake and enjoy!
