Please allow me to whine for a second. And please allow me to whine with full knowledge that all of things are relatively small and, yes, I know things could be worse. I’ve had things worse. Lots worse. I don’t want things to be bigger or worse, but I’d love for some of these to be gone too.
- I’m dealing with a painful skin infection that has disturbed my week & set me back. And it means I can’t wear my favorite capris, which is significant enough to mention.
- My desk looks like a paper avalanche hit it.
- We’ve been to the store MULTIPLE TIMES and yet we still keep leaving without dishwasher detergent.
- I have a stack of library book that are now a week overdue — and I didn’t read any of them.
- My favorite coffee mug broke.
- I’ve started spotting ants in my bathroom (in my shower of all places), which is where we had a major ant problem last summer.
- I haven’t cooked since last Thursday. Today is Wednesday.
It’s life, it happens. I’m actually a fairly positive person and most of this stuff happens and I go with the flow {somewhat}. And I always believe that even in those annoying/frustrating moments, that things could be worse. I can actually read that list and see a few positives from these negatives.
Except that ants. I see no positives in ants.
To give me at least one #MomVictory and to get this Wednesday back under control, I planned a dinner that was so easy, but yet had all the ingredients that I knew my family would love (well, except one that doesn’t eat shrimp). I mean, when you see how easy this dinner is, you might laugh. It’s okay, I did. But I’m proud of it and hey, all the flavors work well together and it’s a great weeknight meal. Can’t beat that.
You might be wondering about the shrimp since that could potentially be the most time-consuming part of this meal. Well, it’s really easy. This girl that hasn’t-cooked-in-almost-a-week wasn’t going to bread her own shrimp tonight. And you don’t have to either. Just pick up a package of SeaPak Popcorn Shrimp, deep-fry or oven bake, and it’s ready to go for your salad. While you can use your favorite dressing, I recommend the Honey-Dijon Dressing I’ve included below (I shake it up in a mason jar).

Description
This Popcorn Shrimp Salad Recipe with Avocado and Bacon is an easy dinner idea that won’t take long to make, plus has the fun addition of crunchy popcorn shrimp.
Ingredients
- Spring Mix — however much you like
- 1 oz package SeaPak Popcorn Shrimp (12 or 18)
- 1 large ripe avocado (peeled, pitted, and chopped)
- 8 strips bacon (cooked and crumbled)
- 12 in cherry tomatoes (cut halves or quarters)
- 1/2 small red onion (chopped)
Dressing
- 1/2 cup olive or grapeseed oil
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 3 teaspoons apple cider vinegar
- Dash of salt
Instructions
- In a bowl or mason jar, combine dressing ingredients and combine thoroughly. If being made in a mason jar, you can do this by securing the lid and shaking.
- Prepare popcorn shrimp according to package instructions. I chose to deep-fry, but you could pan fry or bake. When finished, allow to cool a bit.
- Arrange spring mix on plates. Top with the rest of the ingredients, dividing evenly among the four plates. Drizzle with dressing, as desired.

This really is a #MomVictory! I love recipes like this because honestly, although I love to cook and it’s my passion, there are days where I’m just spent and I don’t have enough get up and go to get the job done.
