Strawberries are super cheap at our grocery store lately ($1.50 for 2 lbs), so we’ve been buying LOTS of them. We freeze them and use them in smoothies almost every day.
The other night, I was craving ice cream and we didn’t have any. Then, I remembered seeing lots of idea on Pinterest where people were blending up frozen banana and making “ice cream” with them. I had two frozen bananas in our freezer — so I decided to give it a try, but decided that strawberry banana flavor would be even better.
Blending up just two ingredients: frozen bananas and frozen strawberries created this amazing “ice cream”. What’s not to like about all-natural fruit, no added sugars, no fat, and low in calories…blended up into a frozen treat? It made me very happy.
- 2 bananas, peeled & sliced
- 1 cup hulled & quartered strawberries
- Optional: Granola
- Spray a plate or baking sheet lightly with cooking spray. Place bananas on one side of the baking sheet or place the strawberries to the other side. Set in freezer until frozen.
- In a food processor, blend the frozen bananas until smooth and creamy. Add strawberries to blended bananas and process just until incorporated into to the banana.
- Serve immediately, or place in a freezer safe container and place in freezer until firm. If serving after freezing, remove from freezer 5-10 minutes before serving to allow ice cream to softened. Top with granola, if desired.
--If you want to add a touch of sweetness, add a packet of Nektar Honey Crystals or 1 teaspoon honey
You may think my happiness ends there. But it continues when I decided to sprinkle Kind Healthy Grains Oats & Honey Clusters on top. But I might not have paid attention to some of the others if it wasn’t for this box. Like, Nektar Honey Crystals. These are so great for taking on-the-go for sweetening my tea.
Another item I was pleasantly surprised with was the Manitoba Hemp Hearts. I didn’t even know that something called “hemp hearts” existed until getting them in this box. But that’s what makes the box fun…trying new stuff that might just become a new favorite. My box also contained EBOOST, Oloves Hot Chilli Mama Olives, and a $25 gift card to iTrain.
