Meatless Sloppy Joes

Meatless Sloppy Joes

Today, I'm one of many food bloggers participating in a special awareness event -- Food Bloggers Against Hunger. This is a topic that is personally very important issue to me. Did you know that someone on government food assistance (SNAP) will typical receive only $3-$4 a day to purchase food for themselves? Could you imagine spending only $1 for each of your meals? I recently watched the new documentary, A Place at the Table, and it left me wondering if I could buy food to make a healthy family … [Read more...]

Veggie Loaded Pasta Bake

Veggie Loaded Pasta Bake

I've heard a lot about how good kale is for you, but other than making kale chips once or twice, I have no experience with it.  I spotted this recipe in the January 2012 issue of Better Homes and Garden and I liked that it included kale. It seemed that with the cheese and pasta (very similar to my own macaroni and cheese recipe), this might be a great way of introducing kale to the kids as part of an actual dinner.  The question was: would they like it? … [Read more...]

Lima Bean Soup

Lima Bean Soup

I have to tell you how much we loved this Lima Bean Soup. Everything about it was delicious and I am so happy with the flavor the leeks gave it. I did double this recipe below and it made more than enough for my family of five (generous portions, plus leftovers). Oh, and we will definitely be making this again...it's a keeper! … [Read more...]

Chicken Pot Pie

Chicken Pot Pie

Chicken pot pie is one of my top favorite comfort foods. In the early years of our marriage, there was no way I would have made it homemade. Seemed so complicated. We did have it at home, but it was almost always a frozen variety. I ordered it in restaurants too. I remember choosing it during our 3rd wedding anniversary date night to Marie Callendar's restaurant. I've come a long ways from that time and I think my family is quite happy that I have. If I say we are having chicken pot pie for … [Read more...]

Whole Wheat Carrot Cake

Whole-Wheat-Carrot-Cake-2

I've experimented quite a bit with whole wheat flours. But, there has been some recipes that I haven't tried it in and the one big one is carrot cake. I LOVE carrot cake - it's my most favorite cake of all and I generally have it about twice a year: my birthday and Mother's Day. I have a carrot cake recipe I generally use, but I've used a few through the years and each one is made with all-purpose flour. I don't use whole wheat...I don't even mess with it. … [Read more...]

Ina Garten’s Lentil Vegetable Soup

Ina Garten's Lentil Vegetable Soup

While making up my menu plan, and in an attempt to use up some of what I have in my pantry, I noticed that I had two bags of lentils. I've had them for a while now, so I figured: use 'em or lose 'em. I knew I wanted to do a soup with them, so I start my search for a new soup recipe to try. I wanted something low in fat and meatless -- not that we don't eat meat, but we are eating less meat lately. I ended up deciding to make Ina Garten's Lentil Vegetable Soup.  It made a HUGE batch. Of … [Read more...]

Honey Glazed Carrots

autumn-apple-dinner11

When growing up, we had meatloaf fairly frequently and it was ALWAYS accompanied with peeled potatoes (cut into chunks) and carrots. Everything was baked together with the meatloaf, in one pan. I always loved that dinner. Now, cooking for my own family, carrots are a favorite vegetable side dish. Every person in our home enjoys them, and there is hardly ever leftovers. One of my favorite things about carrots? They are CHEAP. And, they are good for you. What could be better? … [Read more...]
