Easter is almost here and these Mini Frittatas in a Jar with Asparagus & Pancetta are a delicious idea for your Easter brunch. They are super cute, easy to make, and perfect for Springtime. Can you believe it's just over 2 weeks until Easter? I knew it was coming, but I didn't realize it was so soon. I usually like to decorate about a month before any given holiday, but I've been so slow with Easter. David is the designated get-down-the-holiday-stuff person and he brought me in one box … [Read more...]

Side Dish Recipe: Parmesan Spaghetti Squash

Parmesan Spaghetti Squash

When Autumn rolls around, there is one side dish recipe I always make -- and usually a few times: Parmesan Spaghetti Squash. It's so frugal, but so good! If you aren't familiar with spaghetti squash, it's a winter squash that is oblong with a yellow, hard shell. The inside is a stringy, which is why the name "spaghetti" squash. One of the things I love about spaghetti squash, like other winter squash, is that they keep well. I buy when I see the prices the lowest and keep in a cool place. … [Read more...]

Fried Zucchini with Chipotle Ranch Dip and Parmesan Cheese Ranch Dip

Fried Zucchini with Chipotle Ranch Dip and Parmesan Cheese Ranch Dip

Here's one of many weird things about me: I don't like ranch dressing, unless it's used as a dip. I can't handle it on a salad. Or even on sandwiches, or other ways I've seen it used. It's not like I would refuse it if I went to your house and you told me that was the only salad dressing you had, but I definitely don't prefer it. But, for a dip, I think it's fabulous. Right out of the bottle works for me, but you can also get creative with bottled ranch dressing. I've got two ranch dip ideas … [Read more...]

Crispy Garlic-Parmesan Chicken (plus our shredded chicken FAIL)

Crispy Garlic Parmesan Chicken with Progresso Recipe Starters

When I meal plan, I usually balance easy meals with time-consuming meals. If I know that I will be cooking for hours on one day, the next day will almost always be something easier. This Crispy Garlic-Parmesan Chicken is an example of an easy meal I made. It was made with a new Progresso Recipe Starters cooking sauce, which was sent to me to try out.  The recipe was easy and the chicken turned out good. I loved that the breading was equal parts of Parmesan cheese and panko bread crumbs. I'm … [Read more...]

Parmesan Crusted Chicken

It's been getting less frequent for our entire family -- including our two adult children -- to be home for dinner. It does happen about once or twice a week, but most of the time David and I and the younger two kids will eat together, with the older two will eat separately at a later time. I do miss all of us eating together on a daily basis, but with work schedules being so varied, it's hard for it to always work out. This week, we had one of those nights when we would all be together and … [Read more...]

Rosemary Garlic Chicken Breasts with Parmesan Linguine

My oldest daughter has to wake up for work VERY early. I am usually still awake when she gets up for work. We also tend to eat dinner much later than your average family, so many nights, she is in the routine of going to bed before dinner is ever done. When she wakes in the morning, she eats the dinner for her breakfast. It's a switched around way of living, but it's working for her (and us) at this point. … [Read more...]

Tuna Noodle Casserole

I've been making tuna noodle casserole for as long as I have been married (21 years now) and most of the time, it involved cream of mushroom soup and/or Velveeta. I grew up having it with the cream of mushroom soup, but it never included the Velveeta, and it always had crushed saltine crackers on top. My husband, on the other hand, grew up and loved a similar version, but it has a loaf of Velveeta cheese mixed in, minus the crushed saltine crackers. This became the version I started making for … [Read more...]
