Last night we had a repeat of a dinner that I came up with several months ago. After the summer had ended last year, we had a pretty good amount of bottled barbecue sauce in our pantry. You know how it goes on sale a lot during the summer? Well, we went a bit overboard.
I started brainstorming for meal ideas that we could use all this barbecue sauce in - and that's when BBQ Chicken Quesadillas were created. While we eat them for dinner, they are great for lunch too. They would also be the

Carrot Pineapple Cake (My Birthday Cake)
For the last few years for my birthday, Wellie makes me a carrot cake. More often than not, it's a homemade carrot cake - and sometimes if I am lucky, I get it on Mother's Day too.
The thing about the carrot cakes she makes me if that we never save the recipe. Each year she goes on an internet search for a carrot cake that includes pineapple in it and I would imagine that each year it has been a different recipe.
This year was no different.
Wellie went on a search on her laptop and at the
Mango Guacamole Recipe
For some reason, I have been thinking that I don't like mango. I have no idea why I thought this, but even in discussions with various people I usually say that I don't like like them.
But apparently I do.
In the current issue of Cooking Light magazine (April 2010), they had a recipe for what they call Mango Salsa. It looked mighty good and it was used as a topping for a Black Bean Burger. Last week I planned this dinner and it was wonderful, but as usual, I did my own twist on their Mango
Robust Lentil Soup (with help from Alton Brown and Rick Bayless)
For the first time in a long time, I checked out some cookbooks from the library. One of my favorite chef's is Rick Bayless so I requested every single one that had anything to do with him in our local library system. Most have to be sent to me from other libraries in our region (or I'm next in line for those checked out), but the first one I have received is Rick Bayless's Mexican Kitchen - Capturing the Vibrant Flavors of a World-Class Cuisine.
One thing that I have never really done
Winter Squash Soup
Soup season is coming to a close for us. Once the weather warms up, I won't be making it much more, so it's now or never to try some good ones.
As I was browsing the January/February 2010 issue of Weight Watchers magazine, I saw a fairly simple recipe for Winter Squash Soup. I had bought a butternut squash for another dish I was thinking of trying, but never got around to it, so this looked like a perfect way to use it up.
Now, I have never cooked butternut squash, I'm not even sure that
Black Bean Soup
I'm still sticking to my plan of cooking one new soup each week during the cold months of winter. So far, so good!
Today, I bring to you Black Bean Soup. I've mentioned previously how much David likes black beans, so I was pretty sure making Black Bean Soup would result in him loving me even more than he already does. I had a 2 lb bag of dry black beans and especially since I was trying to watch my grocery spending this month, this was a perfect fit.
I've never made Black Bean Soup, so I went

Potato Soup is one of my top 3 favorite soups. I've had so many different versions through the years (my mom's is my favorite) and I've liked them all. But even with all the great ones out there - including some that I've personally made - I am always thinking
How To Make Grilled Cheese Sandwiches For A Crowd
One of my favorite inexpensive "go to" dinners is Grilled Cheese and Soup, particularly in the winter. I know many people have this as a common lunch, but I first married, there wasn't hardly a month that we didn't plan at least one dinner of Grilled Cheese and Soup. It was a cheap comfort food, and one of the meals I could surely make well.
Anytime that we have a dinner like Grilled Cheese and Soup, it means that I am making them for several people at once. I do come from a big family, so I
