Courtney has been requesting General Tso's Chicken. I think the version she was actually requesting was the one in the Walmart Deli, but I was hoping for something homemade, that was a bit lighter. I searched around and found Martha Stewart's Lighter General Tso's Chicken and we decided to try that.
When thinking about a side dish, I was going to make a plain batch of brown or white rice. Nothing fancy. But when checking out the December issue of Cooking Light magazine, I happened to come

Honey Glazed Carrots
When growing up, we had meatloaf fairly frequently and it was ALWAYS accompanied with peeled potatoes (cut into chunks) and carrots. Everything was baked together with the meatloaf, in one pan.
I always loved that dinner.
Now, cooking for my own family, carrots are a favorite vegetable side dish. Every person in our home enjoys them, and there is hardly ever leftovers. One of my favorite things about carrots? They are CHEAP. And, they are good for you. What could be better?

I've been trying my hand at lots of different tomato pasta sauces. But for now, most are made with various combination of canned tomato products - which works for our

Like many others, our family has a barbecue on Memorial Day. Usually we do burgers or chicken. Or maybe some steaks. But this year we decided to grill shrimp - healthy, light and easy.
We've grilled shrimp before, but it was not memorable at all. I'm not even sure what we put on it. Probably some packet of
My Piece Montée – Croquembouche (Daring Bakers Challenge)
Someday, I'll get a tattoo.
But for now, I will make a croquembouche.
Last month I learned about an online cooking group called The Daring Kitchen. Within The Daring Kitchen is two groups: "The Daring Bakers" and "The Daring Cooks".
The idea is that each group is given one challenge per month - a recipe that one of the members chooses. All members get the same recipe and you must follow the directions exactly.
The entire concept of The Daring Kitchen fits along well with my own
