Easy weeknight dinners…in 30 minutes or less!
When I first started food blogging, it was to motivate myself to cook at home more often for my family. We had gotten into a habit of going through the drive-thru way too often and I was watching our eating habits becoming worse and worse. When our children had more memories of the menu at the fast food burger place than the meals I cooked for them, I realized something has to change.
Initially, my efforts at cooking meant long complicated meals. I felt like that was the true sign of a good home cook. These complicated meals were balanced with easier meals because, let’s be honest, I didn’t have the time to spend hours every night cooking dinner.
But, a funny thing happened. I realized that my family loved my easy cooking just as much as the ones that took me hours.
And, I made an even bigger realization: the easy meals had just as much memory-making potential as the one that left me exhausted at the end of the night. I began to see that memorable food wasn’t necessarily about the food itself, but more about everything else surrounding the food: the conversations that were taking place, the people who were there, the atmosphere in our home and kitchen, and even other factors that I couldn’t control or plan for.
This is the reason why I started focusing on easy dinners for my family and sharing easy dinner ideas with all of you. Everything I share are meals that my family is loving, but more often than not, they are fairly simple, easy-to-make recipes. And so many of them are perfect for hectic weeknights.
Of course, planning easy dinners is one why of saving my sanity (and yours), but there are other ways too.
