There is so many different St Patrick’s Day recipes out there and it can be hard to pick one that will be a hit with everyone in your family. That is why we are bringing this recipe to you… Pub-Style Stuffed Pretzels!
This recipe starts with making a homemade pretzel dough that is made with warm Guinness Beer! The filling is made up delicious thinly sliced Corned Beef Brisket, Shredded Swiss Cheese, Sauerkraut, and creamy Thousand Island Dressing!
Do I have to add the Sauerkraut to this recipe?
Sauerkraut has plenty of fans but it also has some haters. Even though we highly recommend keeping it in the recipe because it goes so well with the Corned Beef, we understand not everyone likes that topping. You can remove it off the recipe and it will still taste amazing! Just keep in mind that taking that part of the recipe out will mean there will be less of the filling. You can also add more Corned Beef or even chopped up pickles to fill in the space.

Ingredients Needed for Homemade Stuffed Reuben Pretzels:
- Guinness Beer (1 1/2 Cups – Warm)
- Salt (2 Teaspoons)
- Sugar (2 Teaspoons)
- Dry Yeast (1 Packet)
- Flour (4 1/2 Cups)
- Butter (4 Tablespoons – Melted)
- Baking Soda (1 Cup)
- Egg (1)
- Water (12 Cups + 1 Tablespoon)
- Kosher Salt
- Corned Beef Brisket (2 Cups – Thinly Sliced)
- Swiss Cheese (2 Cups – Shredded)
- Sauerkraut (1 Cup)
- Thousand Island Dressing (1/2 Cup)
- Vegetable Oil

- Large Mixing Bowl
- Whisk
- Measuring Cups
- Measuring Spoons
- Large Pot
- Kitchen Knife
- Slotted Spoon
- Basing Brush
- Baking Sheet

How to make Homemade Stuffed Reuben Pretzels:
1. In a Large Mixing Bowl, Whisk the Salt and Sugar into the Warm Guinness, then add the Yeast. Let stand for about 5 Minutes then add the melted butter and combine.
2. Add the Flour into the liquid ingredients. Mix until well combined
3. On a lightly oiled surface, knead the dough for 6-9 minutes, or until elastic and smooth.
4. Rub a little oil in the Large Mixing Bowl. Return dough to oiled bowl, cover with a damp cloth, and leave in a warm location until dough has risen for about an hour.
5. While the dough is rising, combine the filling ingredients, and set aside.
6. Bring the 12 cups of water to boil then add the baking soda.
7. Preheat over to 450 Degrees
8. Beat Egg and Water together and set aside.
9. Once risen, work the dough by hand on a lightly oiled surface and form into a large rectangle (roughly 25″ x 16″). Cut into 10 equal portions (roughly 5″ x 8″ each one). Spread the filling ingredients into the 10 dough portions. Carefully roll up the sides and press lightly to seal.
10. One at a time, gently lower the pretzels into water bath for 30 seconds, turning half way through. Remove with slotted spoon.
11. After all of them have been submerged, brush each pretzel with egg wash then sprinkle kosher salt over the top
12. Bake for 10-13 Minutes or until golden to dark brown.
13. Serve with a side of Thousand Island Dressing
