My poor, deprived Mattie. He just learned about peanut butter and banana sandwiches. He was watching something on TV and mentioned to me about someone making a "peanut butter and banana sandwich". I told him "yeah, they're good."
He was shocked. He couldn't believe it. He glared at me as if to say, "YOU KNEW ABOUT THIS?". It was almost the same look I got when he learned that there was peanut butter with actual little pieces of nuts in it (aka chunky peanut butter). See, I told you he was

Tortilla Soup
Tonight's dinner was Tortilla Soup. If you've been following my menu plan, you know that I post it on Mondays. I don't usually check the weather when making my grocery list, so little did I know that today would be one of the hottest days we've had since last summer! I don't like having hot soup when it's hot out AT ALL, but I decided to stick with the plan and it worked out ok.
I didn't dish up a bowl for Mattie - it was a bit spicy and I know he won't eat it. So rather than even attempt it,
Split Pea Soup with Ham
Tonight's dinner was Split Pea Soup with Ham, which I have a tradition of making the week following Easter (using leftovers from our Easter dinner). It's inexpensive and good for you. For those of you who follow Weight Watchers, this has a point value of only 2 pts per 1 cup serving.
We love sourdough bread - especially when paired along with soups, so I served the soup with Monterey Sourdough Bread that I picked up at Sam's Club.

Menu Planning Dinners
This is a list of common dinners we eat at our home -- I usually try a new dinner once a week and if it's liked, we add it to the list. Having this list helps me with menu planning. Some of these recipes are already on my blog, but I am slowly adding the others and linking them as I have time. Smothered Burritos
I love these! But I make healthier versions of them now by using light or fat free sour cream, reduced fat cream of chicken soup, and low fat refried beans or black beans. These can easily be made without meat too. If you're a vegetarian, you could use cream of mushroom soup instead.Smothered Burritos1 lb. cooked ground beef, drained1 pkg. taco seasoning1/2 C. chopped onion1 (4 oz) can green chilies1 can refried beans3/4 C. water12 large tortillas2 cans cream of chicken soup1 (16 oz) carton sour
Burritos (tonight’s dinner)
Okay, tonight's dinner is burritos. I don't really do anything special for them but I thought maybe some would like to hear the details of "our" burritos:I have started making my own refried beans. It is fairly easy to do if you plan ahead, so much less expensive, and better tasting. I usually buy a 4 lb bag of pinto beans (costs me about $2.50) and cook them all up in advance. I freeze what I know I will need for dinners in individual freezer bags (two different sizes, one with less for side
Appetizer Meatballs
Appetizer Meatballs
1 bag plain frozen meatballs (I believe the bag I buy has like 40-50 meatballs in it)
1 can cranberry sauce
1 jar grape jelly
1 jar chili sauce
Mix cranberry sauce, jelly, and chili sauce crockpot. Mix together. Put meatballs in a crockpot, stir with sauce. Cook on low 6-8 hours. I've also had friends do this with little cocktail wieners and also sliced kielbasa sausages -- it's all good!
Mexican Lasagna
I finally found an old recipe box that I have been missing for a while. It's one I started a LONG while back, it's been in packed up box for over 5 years...probably much long than that. Anyway, one recipe I had to share from it is Mexican Lasagna. I had not made it in a long time but just made it last week. I really like this recipe because unlike so many of the Mexican Lasagna recipes that are around on the web, this one uses actual lasagna noodles, not tortillas.Mexican Lasagna1 lb. lasagna
