It’s #SundaySupper time again and this week our theme is Helping Hands. Each participating food blogger is sharing a recipe for something that can be made to give to someone who might be going through a rough time…for whatever reason.
I’ve had times when someone has surprised my family and I with a casserole or some bread. These kind gestures have always meant a lot to us and made us feel like someone truly cared.
Ingredients Needed for Cranberry Orange Bread:
- Unsalted Butter (1/4 Cup)
- All-Purpose Flour (2 Cups)
- Light Brown Sugar (1/2 Cup)
- Granulated Sugar (1/4 Cup)
- Baking Powder (1 1/2 Teaspoons)
- Baking Soda (1/2 Teaspoon)
- Salt (1 Teaspoon)
- Large Egg (1)
- Orange Juice (3/4 Cup)
- Orange Marmalade (1/2 cup)
- Whole Cranberries (12oz)
Cooking Equipment Needed for Cranberry Orange Bread:
Because I know how good it feels to be given a meal or baked goods like this, I try to also do this for others. I think that when someone is ill, experienced a loss in their family, or going through hard financial times, that these are the perfect times to lend a helping hand through food. Sometimes a pan of homemade macaroni and cheese or a pot of beans can help make things easier for someone.
And let’s not forget natural disasters, such as those that live in areas devastated by Hurricane Sandy. It’s been weeks since Hurricane Sandy hit the US, but there are so many families still trying to rebuild their lives.
My contribution to the Helping Hands Sunday Supper is Cranberry Orange Bread. I love to make quick breads because they are… well, quick! They are so easy to mix up and bake, plus they are easy to wrap and very portable.
Last year I stocked up on bags of cranberries that were just .25 cent a bag. I knew that I could freeze them for up to a year and that time is coming close, so I’ve been busy making various recipes with them. One such recipe is this Cranberry Orange Bread. This recipe also use orange marmalade, which I had leftover from making my Orange Spiced Roasted Chickpeas.

Description
A quick Cranberry Orange Bread recipe that makes an excellent food gift or keep it for yourself for breakfast or snacks.
Ingredients
- 1/4 cup unsalted butter (melted)
- 2 cups all-purpose flour
- 1/2 cup light brown sugar (packed)
- 1/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 large egg (lightly beaten)
- 3/4 cup orange juice
- 1/2 cup orange marmalade
- 12 ounces whole cranberries
Instructions
- Grease and flour a 9×5″ or 8×4″ loaf pan. Preheat oven to 350 degrees F.
- In large bowl, combine flour, sugars, baking powder, and salt. In medium bowl, mix together butter, egg, orange juice, and orange marmalade. Add wet mixture to the dry ingredients, stirring together until fully combined. Fold in cranberries.
- Pour/spoon batter in prepared loaf pan. Bake until knife inserted in center comes out clean, about 55-65 minutes. Allow to cool in pan for 10 minutes and then remove from pan and allow bread to fully cool on a cooking rack.
Notes
–If you prefer, cranberries can be cut into smaller pieces.

Thank you so much for this recipe! I’ve now made three loaves to give as gifts (and I’ll be making three more before the season’s done). I tried a piece of the first loaf and found it would benefit from halving the cranberries, so I’ve only been putting half a 12 oz. bag in each. This is a very easy and completely delicious recipe, and I can’t wait to see what my friends and family think!

Hi Megan! Yes, you could use this for muffins. However, I would recommend giving the cranberries a course chop, so that they are smaller. You definitely don’t have to, but the cranberries burst while baking, so that’s what I would do if I made muffins with this recipe.
